This is a very difficult review. The service and atmosphere is great and I am sure the owners are amazing people. However, this is about the food. I ordered a chopped beef sandwich. 1/2 slab of pork ribs and potato salad. I ordered the ribs because I wanted to compare them to local established such as Hutchens and Tenders BBQ. With the high star rating, I would expect favorable meat. Texas barbecue is a style of slow-cooked smoked meat that originated in the state of Texas. It consists of cooking beef brisket, pork ribs, and/or sausage over wood or charcoal in an open pit using indirect heat.
I will start with the pros. The proportions are great. Maybe too much brisket on the sandwich. Also the sides which are expensive and none are included with the sandwich come in LARGE portions. While this is great, I would rather a reasonable portion at a better price. I will discuss the potato salad later, which was too much for the gigantic sandwich. This place really is trying to give you right amount for the hefty price, but they would probably do better by decreasing the portions and decreasing the price. If a single customer wanted two sides, they would waste a lot of food. They should consider cutting the price or adding a smaller side to a $14 sandwich that doesn’t even come with a pickle. I was confused as to why plates come white two sides and sandwiched come with nothing. Pricing is off and should be simplified. However, portion size is a pro if you can eat that much food or intend to share sides.
The technique infuses the wood and smoke flavors into the meet. My Earnest B’s BBQ was not Smokey or flavorful. If requires BBQ sauce for any flavor, which was another problem. Consider flavor, texture and how well the sauce clings to the meat was a miss on all fronts. There is no comparison to Hutchins which is close by in regarded to texture and flavor of the meat. My ranking for best to worst would be Hutchins (best)Tenders, and Earnest B’s (last).
The chopped brisket sandwich again had NO SMOKE or Wood. No Flavor. The BBQ sauce was not good enough to overcome this. They put way too much meat on this sandwich, albeit, they are probably trying to justify the price. The brisket was somewhat dry. I will not say it was a bad sandwich, but you can get a much better BBQ brisket sandwich at Buc-ee’s for $6.99. I don’t suggest that you eat at a gas station, but adding a ton of brisket to a sandwich doesn’t compensate. Make the sandwich smaller and more manageable to eat and add a side to that price. I waisted a good portion of flavorless brisket as too much was in the sandwich.
The potato salad was promise OK, not good but OK. The serving size was way too much, it’s a lot of food to waste if you don’t like it.

The food, whether it was chopped brisket or fried catfish or wings, was flavorful, juicy, tender, and prepared in such a way that properly respects the age old craft of barbecuing meat. I did not see a single person sat down eating who was not smiling while enjoying their food. Regardless of whether you utilize his tantalizing house-made bbq sauce or decide to embrace the flavors of the smoke, theres no denying it will be a tasty meal. After watching several lessons from Earnest’s barbecuing classes I can assure you, this is a pit master who has taken the time to understand the process he seeks to perfect. Beyond his mastery of BBQ, Earnest himself, a pastor alongside pit-master, is a true hearted community man without a doubt. The joy he displays towards life is that of a child who never lost its innocence. Upon entering the establishment I was immediately confronted by a wall of framed photos, articles, awards, and merchandise all seemingly related to or focused on Earnest. However, upon closer inspection of that wall of photos after having met the mean, I realized that it is in fact not simply a display of Earnest, but a display of the wide reaching community in which Earnest is a part of. It is a wall of family photos showing gratitude to all those around him that he encounters. During my visit, I personally witnessed Earnest come out from behind the scenes where he was clearly working hard to enthusiastically sing happy birthday to a woman celebrating with her friends and family. Upon learning it was the birthday of a little girl a few tables over he came over and personally conversed with the young girl and her family before proceeding to once again shower the birthday girl with harmonious tidings of joy. He didn’t stop there either, proceeding to greet not only myself but other customers in the building as well. He stopped to listen and have genuine conversation with each. All the while, Earnest clearly could not have been happier. My point, summed up, is that while Earnest is an amazing master of the flavors of the barbecue pit, his true success in keeping the craft burning strong is that he replicates the truly authentic community focus that much of BBQ culture has come to be built around. Whether you plan a special trip to come try Earnest B’s BBQ or just happen to be in the area, I can assure you without a shadow of a doubt you don’t want to pass up such high...
Read moreWent to Ernest B's new location in Frisco on Friday (11-10-23) after hearing lots of positive buzz from friends. WOW! It did not disappoint. I had the three-meat plate with brisket, pork ribs and jalapeño sausage and loved all of it. The brisket was so flavorful and moist - and yet, not overly fatty. My 12-year-old daughter (a picky eater, as many kids are) took down her entire brisket sandwich and is already ready to go back. The ribs were meaty and the sausage packed a nice punch. I'm a HUGE fried okra fan (it's my favorite thing at Hutchins) and Ernest B's scored big here, too. Fries were fresh and crispy. Even the Texas toast was a standout. Let me also rave about the sauce. Nice and tangy with a little punch. Not too thick or thin ... just perfect. Another pleasant surprise was the catfish (my son ordered it and I stole a piece). It was a far cry from the paper-thin-fish, all-batter variety you'll find at many area seafood restaurants. The catfish at Ernest's is much more meaty and the seasoning on the batter put it over the top. I relished each bite. They also offer whole, bone-in catfish, which I'll getting next time. The cherry on top of the whole night was when Ernest gifted me a few free slices of smoked bologna after I commented on how excited I was to find a restaurant with this on the menu. It was fresh out of the smoker and off the grill. You just don't see it very much these days. Or at least not in this area. I had a few bites at the restaurant and brought the rest home for lunch the next day. Tasted great on a sandwich with mustard. Ernest is a great guy with such positive vibes and infectious energy.
