This place can be easily summarized: perpetually short-staffed since they opened their doors and serves good (not great) BBQ.
I’m not a betting man, but if I were in Vegas, I’d wager $1,000 if you ever go to this establishment, there’s going to be a “NOW HIRING” sign on their front door; it’s been there every time I’ve gone since they opened the doors a few years ago, and their lack of staff is quickly recognized the moment you enter. Of the dozen or so times I’ve dined here, there was a host at the front desk maybe three times. When you’re finally seated, you’ll eventually be greeted by your waitress/waiter after some time because they’re likely having to cover half the restaurant. They’ll be justifiably frazzled, so their demeanor won’t be too pleasant, but I can empathize with them.
The food is pretty good, but not great. The portions are very generous and the pricing is good. It’s probably the best “chain BBQ” place I can think of. Everyone’s taste palates are different, but I personally put this above the likes of other popular chain BBQ joints such as Dickey’s, Rudy’s, Colters, Spring Creek, etc. but well below pretty much any independent BBQ place (i.e. Cackle & Oink, Hutchins, Heim, etc.).
All-in-all, this is a pretty middling BBQ joint, but it’ll definitely suffice if you’ve got a hankering for BBQ in the Gainesville area but don’t want to travel too far for something better. Just don’t expect terrific service — they simply don’t have...

The actual food is WHY I deducted stars, if youve been following my reviews you know I love giving all the stars. So you must understand I have a reason if I'm not giving them according to our recent experience, let me explain.
The restaurant's name gave us the impress that we would be devouring fresh, tasty ribs right from the grill. But our expectations were a bit too high as the ribs were indeed not fresh. They had great flavor overall, but they were not straight from the grill/smoker, it seemed as if they had been re-heated from a day or so before. Kind of a letdown. The brisket was the same thing, it was re-heated and was served cold.
I ordered the Smokey Chicken sandwich. Unfortunately my chicken very closely resembled the Perdue brand chicken I buy from Kroger that already has the fajita seasoning on the outside and has been cut into strips. There's nothing wrong with not making your own in-house chicken, but it WAS ALSO COLD! The bacon was fresh though! And the green beans were hot/fresh with the seasoning being on point.

Read moreThis Rib Crib in Gainesville has just opened recently, so I wanted to give it a shot. Ordered the triple meat combo. Ribs, brisket and sausage with mashed potatoes, gravy and onion rings. Ribs were good, but there were only two of them. Brisket was dry and portion was small. Sausage didn't taste like sausage, it tasted like smoked bologna and was very greasy. Mashed potatoes portion was so small I thought they made a mistake and brought a child's sized portion. Onion rings were good. Our food was luke-warm when served. I dislike being served what is supposed to be a full-sized meal on a cheap (smallish) plastic basket and a piece of paper on top of it. Did I order $16 worth of food at a gas station? The bbq sauce was good but not spectacular, brisket was too dry by itself so the sauce was basically required. I will continue to eat at the other nearby bbq restaurants because they have better food and prices. A few other noteworthy things. Their website doesn't even list the Gainesville address correctly. It's listed with an Amarillo zip code. Gainesville is misspelled twice, come on guys... I downloaded the pdf take-out menu. Obviously this needs to be updated.
