Somewhere near the heart of Texas, there is a special place that is worth the search. regardless of where you are coming from, it will be a place to remember.
As you come down the back roads of state highway 29, you make the turn north into DB Wood Rd, Just past the Georgetown Number 5 firehouse, you will find an oasis on the right past a few trees, there is a stonework building. depending on the season and weather you may see the flicker of the flames from the outdoor lighting, giving the warm respite from the sometimes frigid outside world. Within the double doors, you will find a brightly lit dining room, with various tables of various sizes and heights. welcoming those of all shapes and sizes to this warm hearth with its large wood fired oven welcoming all to sit and relax. For those who come here, know they will have their choice of pizza, or salads, along with various treats and in house made Gelato if that is your fancy.
Among the friendly Staff, we have Raquel, who welcomes everyone with a smile, and if she learns your name, you will be welcomed back by name from then on. with a smile that brightens anyones day, along with a heart as warm as the hearth from which she will be happy to fix your own pizza made specifically for you. You choose the toppings, she will put it together so that it cooks in a timely manner and to your specifications. While Lady Rebecca will be happy to continue with your Salad order, if you so desire one. You can choose from the menu, or build your own like with the pizzas. She will make sure everything is on it as you wish to have. Regardless of what you choose, you will be greeted with s smile. While Isaac keep watch over the oven, as you food cooks, wether you want it lightly cooked, or enjoy things on the darker side. It will come out as you specify. Along with the team of others on various days, the only time you will not be welcomed by them, is on Sunday, as the staff will be home with their own families.
Now if you wish to have your pizza and salad, but can’t take the time to wait for them or eat them inside, you can order online and they will have it waiting at the Drive up window, hot and ready for you, (well… probably not a hot salad, or gelato) Speaking of Gelato… They make their own from scratch each day. Most days they will have 4 unique flavors, however, it may be different depending on the day. Inside the gelato has its own line, from the gelato stand. They also accommodate for those woh have leftovers, who wish to take home their prize pizza. Just ask, or look to where the drink station is and you will find the pizza boxes waiting for you. They also have other treats including a cheesecake, and other treats. For the summer they are also sporting Strawberry Lemonade.
Their staff always welcome this wary traveler after he returns home from his voyages across the country, to make his meal as he likes it. Wether he chooses his normal pizza, or the occasional salad and breadsticks. He is always welcomed with a smile, although no so much the “NORM” yell of cheers, but close to it. This is definitely worth the first, second, and repeat visits. The air of the room is one of relaxed, not rushed, grateful and friendly food. Very well kept up, and willing to please, fixing any issue you may have if one arises. They do their best to make sure your stay is memorable.
If you do visit, Tell em’ “Flintheart Sent ya,” They will know who that is. however, it may not get you anything more than you normally will from them, but they will know you have read this.

Read moreInteresting concept, but not the best execution. From the outside, I thought this was a full service restaurant, and was looking forward to maybe a glass of wine with a choice of pizza or pasta.
Stepping inside, it's very different. It's almost set up like a Chipotle, with someone at the beginning of the line to start your order, and a lineup of ingredients to your right, and several people assembling pizzas. But, apparently the first person takes the entire order and you never really select ingredients down the line. There are some named pizzas with a set ingredient list, but they feel like suggestions.
There's no complete list of options that I could see, and I had to make choices by sort of glancing down to my right. It's all individual pizzas, so you definitely get what you want. But after ordering my pizza, nobody told me what to do next, so I had to ask. I walked down to the end where the register is, and someone starting ringing me up. I asked how she knew, and if she walked to the start of the line and back to find out. She said yes, that she usually gets the assembly sheet, but that she was still working on it, or something.
I paid, sat down with my order sign to place on the table. Couple minutes later, someone brought me my small Caesar salad. Good salad, but filled the bowl so much that it was hard to stir in the dressing.
10 minutes later, I was presented with my pizza. The wrong pizza. It had been made exactly as the description, with none of my customizations. 10 minutes later, I had my custom pizza. Decent pizza - meat toppings were adequate, mushrooms, onions, and basil were sparse. A bit bland, so I had to add a little salt. Folding a piece to eat made all of the sauce and toppings shift to one side when it opened back up, which was odd. I couldn't remember seeing this happen to most pizzas. Then I remembered how they start the pizza. Some little machine presses it out to the perfect shape /size. Not sure if it applies heat, or if oil is required to prevent sticking. But this step is probably the reason why the ingredients don't adhere. Opening back up also revealed a thin layer of uncooked dough. But, this just follows my theory that the majority of pizza everywhere has this issue, especially with lots of toppings. The inner part of the pizza just isn't exposed to enough heat to fully cook. This is why, at home, I ALWAYS blind bake my crust for 5-8 minutes before adding sauce and toppings.
But, overall, a decent pizza and value.
I do see some issues with the concept, though. The assembly line (that's not really a line) that I mentioned earlier; and the individual pizza concept. I watched as to go order after to go order went out, and a family of 3 or 4 each had their own pizza, each in a box. For an $8ish pizza, 3 to 4 boxes per order is just going to be...

So much so that I went back the very next day to order TWO of the exact same pizza to take home and share with my family. After waiting a solid 20 minutes in line, I ordered the same pizza x 2. When I asked for sun dried tomatoes, I was told no. Why you ask? Well, apparently they have some sort of policy concerning the pizza of the month LOL. When I told them I would happily pay for the extra toppings and that I had just ordered this same pizza the same way no less than 12 hours ago I was still told no, crazy right? The, I am assuming lead? Said the person last night made a mistake and was reprimanded for it (OVER SUN DRIED TOMATOES! THAT WERE SITTING IN A CONTAINER 3 FEET IN FRONT OF ME! THAT I OFFERED TO PAY FOR!!!!) Either way, I was holding up the line, felt embarrassed, and after a few polite exchanges, I told them to keep the pizza's and I walked out. Firo, you have some top notch pizza. And maybe it's a good thing your customer service left a bad taste in my mouth because I would definitely spend waaay too much money in your establishment. So, you get 5+ stars for food, but -20 for customer service so that is why I am leaving this review. All in all, if you visit this establishment, read the fine print (or lack thereof).
