Had dinner on Saturday 5/6 with 6 friends. Tried to sit on the patio but was told tables could not be moved to accommodate the 7 of us. Were offered a table that sat 6 with a chair to be added on one end of the table. This would not work as the tables were not that big and we would be squished at one end and probably no room for the food once delivered. We sat at a high top opposite the bar which was okay but the music was loud and we could not carry on a conversation at the table. I was able to talk with those who sat near me but not with my friends at the other end of the table. When the entire party was seated we were informed for parties of 6 or more, they would do one bill and a 20% gratuity would be added to the bill - typical restaurant actions on large parties. The waitstaff did let us know we could throw down as many credit cards as we liked when the bill was delivered. Meal went along well, food is good and flavorful - not your typical dishes - except for the pizzas and Humble Ettas. When our meal was done, the bill came and I figured out the amount for the 4 checks that were to be paid. I collected two cash payments and two credit cards. The waitstaff came to pick up the payment and said she could only evenly split the bill with the credit cards and not put $60 per card as requested with the rest cash. The waitstaff left and sent over her manager who then agreed to do as we originally requested. We had already collected the exact amount of the bill in cash so declined the managers offer. I did not care for this because the manager requires one thing of his staff and then offers what was originally requested. None of this would have bothered me except for what the manager did - had he let the staff run the credit cards through as originally requested I would not be writing this review. I have been here many times and enjoy the restaurant except for the loud music. On several other visits I have asked to have it turned down but was told this is the 'brand' the owner is working for. I am not a fan of the loud music because it takes away from a customer having a conversation during dinner. Over all, this incident turned me off of the restaurant - to include not moving tables on the patio, the loud music and offering to run the credit cards as originally requested. As an owner, do not put your staff in an awkward position such as this especially when the manager came over and offered to do as we originally requested. Not good. As I told the waitstaff and manager I will not be coming back. There are many restaurants out there that have great service and great food so I will frequent those. ** March 5, 2024: Thank you for response 9 months after this was posted. Read moreMy husband and I highly recommend Humble Bistro. We were so surprised with the quality of food, all prepared by an actual executive chef. He actually brought our dessert to our table and asked what we'd had for our entrees. We ended up having lovely chat with him - he was delightful. How often does one meet the chef at a Gilbert establishment?
We ate light, having only the wings and cauliflower appetizers. Both were delicious. When we order wings at restaurants, we always have to order them 'extra crispy' because otherwise they'll come out fatty and slimy. At Humble Bistro, you don't have to ask, they make them that way already! Because we ate light, we indulged in the hot brownie with vanilla ice cream for dessert. OMG!!! This is not your average brownie, folks! it was a large portion for only $6, it was not too rich, not too sweet, perfect combination of fudgy and cakey. To die for!
The patio is picturesque and delightful. My only feedback would be that the music was a little too loud for my taste, but their playlist was fantastic!
We found a little gem in Gilbert, and we will be back!
UPDATE NOVEMBER 2023: And we went back! Again and again! My husband and I have now frequented Humble Bistro in Gilbert at least ten times over the last few months. We have never had a bad or mediocre experience there - it is consistently great! The food, the ambience, the music, the service!! BUT THE FOOD, there are no words!
The chef/owner trained in Europe for a time, and it shows! My husband and I have travelled in Europe extensively and have eaten memorable meals all over. And I'm telling you - Humble Bistro lands in our top 5 best restaurants we've EVER been to! And it's right here in Gilbert!
I'd bet on everything on the menu being top notch, but these are the items i can personally recommend: smoked wings, brussel sprouts, cauliflower appetizer AH-MAZING!, meatballs appetizer, short rib pasta (homemade pasta), and the pizzas! These pizzas rival the best pizzas in Europe!!!!
And the brownie! OH MY GOD! Seriously, the best brownie I've ever eaten anywhere!
Recently we decided to stop in just for dessert, but then we decided to try the hummus appetizer, too. I kid you not - we sat at the bar eating this hummus having repeated foodgasms! This hummus was otherworldly! And the bread! Pretty sure its homemade! Best hummus EVER!
The decor/atmosphere is wonderful - very European feel. And the music is fantastic! I want their playlist! Service has always been top-notch!

LOL We’d been to this location's other incarnations so immediately was shocked at the complete change of look & feel of the interior!! This place is beautiful! A modern, hip & classy wine bar feel.
This visit was a date night with friends who had never been here. We started with the Cauliflower Tahina which we had last time & loved and it was just as good this time around. Only critique is they should let the cauliflower cook a bit longer to get a little softer and have more char/caramelization. The guys each got the Cremini Sachetti which I had my first time. It’s simply FANTASTIC!! One of the guys doesn’t even like mushrooms yet trusted my recommendation and got it anyway. Needless to say his bowl was cleaned and he couldn’t believe how much he loved it!! This dish is superb and a clear winner of the menu….if you like rich delicious truffle flavor, you’ll crave this one! My husband said I’m never allowed to come here without him as he needs this dish as often as possible. For our waistlines, we’ll have to keep it to once a month LOL
I wanted to try new things so we gals shared the This Little Figgy flatbread (their take on brushetta) & The Gentleman pizza. Both were great but the Little Figgy was simply AMAZING!! The flavors of sweet, salt & spice were perfectly balanced and the texture of this dough is out of this world! The guys tried it and loved it as well. The Gentleman pizza was good but paled in comparison to the Little Figgy. If had ordered it by itself it probably would have been liked more 😉 The flavors were all good but we didn’t really taste the sweet of the spicy honey. Maybe it was hard to pick out after tasting the vibrant flavors of the fig 🤷🏼♀️ but we all still enjoyed it.
The wine list here is fantastic (kudos to whoever curated it!) and the price markups aren’t bad either! We didn’t make it to dessert as we couldn’t stop eating the little figgy flatbread….so will have to try dessert next visit! Will definitely be back and highly recommend this place!!
Only think keeping this from a 5 star rating is 1) they should take reservations 2) service is a little slow but they were busy as it was a Saturday night. They should always give fork and knives (not just forks) with the table settings. Minor tweaks…overall solid great new upscale choice for the south...
