The website for The Coop says, "We're a Chicken Joint." That is true, they feature rotisserie chicken. But they also have a number of dishes made with the chicken, including Costa Rican influenced dishes. We had the chicken tacos and empanadas. Both seemed very authentic and were delicious. They were very busy at lunch time and seating is limited. If you can, I would recommend getting there before 11:30am or after 12:30pm. We arrived at about 11:45am for lunch, and had about 15 minutes to wait for a table. Waitresses are very friendly. Red or green salsa is available. Our waitress recommended red for the empanadas. My GF had green with her tacos. I tried both with the empanadas, and she was absolutely correct that red was the best choice. They also have tasty little cornbread cupcakes that they bring to the table while you are waiting for your entrée.

I started with what was described as homemade breaded cheese triangles, which turned out to be heavily breaded cheese empanadas that tasted overly greasy. For my main course, I ordered the half chicken with corn and French fries. The corn consisted of two small cobs, both of which were burnt, and the chicken, while edible, lacked flavor—I’ve honestly had better from Costco. While the food fell short of expectations, I will note that the service was pleasant; the waitress was kind and attentive without being overbearing. Despite this, I don’t anticipate returning.

I ordered the Garlic green beans, they were delicious, but the two entrées I tried, the macnarello (glorified Mac n cheese with scraps of chicken and a few broccoli florets) and the chicken chorizo tacos had little to no flavor. The cheese sauce would not stick to the macaroni and the soft corn tortillas for the tacos had fallen apart BEFORE I went to pick one up. I imagine if you dine in, it would be much better. This place is not for the travel who is on the go.

Was in town for a tennis tournament and heard this was a great place to eat. Cool little place, but I emphasize little. Still, it was pleasant and didn't feel too crowded. I saw only one bathroom and you had to go back where the staff are to use it. Not a huge deal I guess. Our waitress was not friendly at all and didn't check on us very often. Almost seemed to have an attitude for whatever reason. Our food took about 40 minutes to come out, and we didn't order a lot. It was somewhat busy but it shouldn't have taken that long. The food, once it came was excellent and high quality. The BBQ chickens strips were tasty and the Buffadilla was quite a new and tasty experience. This place has a ton of good reviews and I wish I could have given it a better rating. Based on the food alone, I guess I would have to...

The Coop is by far my favorite restaurant in Gillette. It's a quaint, and cozy atmosphere with friendly staff, with laid back and "chill" music (which I'm not fond of but it really fits the theme and creates a very relaxed vibe) that doesn't pierce your ears like obnoxiously loud restaurants elsewhere in town. The portions are big, and I always leave not only feeling full, but rejuvenated and energetic, not bogged down or slow and lethargic like most other restaurants. The food tastes absolutely delicious; their menu is diverse and ample, so there's SOMETHING for everyone, especially gluten free folk. Great chicken, Great drink, and Great people.
