Yum! Got a double smash, gogi goey (bulgogi/kimchi) burger, and birria fries.

Burger was absolutely perfect. Exactly how I like my burgers. Classic and delicious.

Bulgogi burger was also great. The only tricky part is biting through fat pieces of kimchi. It is not going to happen, so you're gonna have to have a bit bite of kimchi. Ohh noooo!! :)

Birria fries were good too. I would say the flavoring leads way towards chili vs birria I've had previously. Still tasty, but maybe not what you'd expect.

Service was awesome. Guys were very friendly.

One huge plus was that altough it was a food truck, they are partnered with the brewery on site. This means there is plenty of great indoor/outdoor seating and free water. You don't need to order anything at the bar.

Went into Paperback Brewing on a Friday night about 630pm, this food truck is out the front and they are awesome! Service is exceptional. You get a buzzer and can go back and enjoy your drinks while they cook, it was pretty quick to be honest to get the food. Wasn’t too busy. I ordered the Fish Po’Boy without Peppers, loaded fries and a double smash burger. The loaded fries are good they are just smothered in cheese so if that’s not your style maybe ask for less cheese or just get a side of normal fries. The Po’Boy was honestly the best I’ve had.
