Some friends came to visit us the night of October 30, so we took them out to breakfast on the morning of the 31st. The place we wanted to go to was closed, so we gave Paragon Family Restaurant a try. It was a good choice.
I had the biscuits and gravy. I did not see any chunks of sausage in the gravy, but I know not everybody makes it with chunks of sausage. So I was slightly disappointed in that regard, but the flavor was still incredible. The biscuits were absolutely perfect. The last place I had biscuits they were compressed and firm. At the Paragon, the biscuits were light and fluffy and exactly what I want in a biscuit.
My father ordered bacon and eggs and hashbrowns. He was told that they serve home fries rather than hashbrowns, but he placed the order anyway. Dad is not a big fan of home fries, so he left them behind, but for those of us who like home fries, these were very tasty. And he was very pleased with the bacon and eggs.
One of our friends had a breakfast burrito. She said it was delicious. It was also gigantic. She ate about a third of it and took the rest with her for the drive to Omaha.
Our other friend had just a single pancake, but she said it was very good.
All the wait staff was dressed for Halloween. Our server was dressed as super mom. She was a super server. She had a great attitude, fun personality, speedy service, and a talent for forethought. When my friend took her burrito to go, the waitress included plastic utensil, so she could eat it in the car at a rest stop. Also, the waitress took the time to pose with us for a keepsake photograph.

I can say this place has the best tzatziki I have found west of the Mississippi River… the Santorini Sunset breakfast platter is amazing. The gyro lunch platter is fantastic. The lady across the aisle from me had a club sandwich that appeared to be ‘to die for’. The mimosas are more champagne than orange juice. The ice tea is excellent. The wait staff is excellent. Serving size, gianormous. Price very reasonable. When you walk in the door, you smell pancakes and maple syrup or some other pleasant, yummy smell. That said, the parking is awkward. The exterior is not very inviting. The interior is shabby except for the bright, lovely photos of Santorini, but it’s comfortable and intimate. Read moreI have lived in Greeley all of 40 years and never visited this place until recently. The service is very friendly and the atmosphere is great just like eating in your own kitchen. Staff are always smiling and attentive.
I had two different meals and both were very well prepared! They have a different name for hashbrowns, which took me a while to get :) American Fries... creative! Bacon was very crispy and not overcooked or limp. I usually get scrambled eggs to be safe and they were just right. The waffle was a little undercooked as I like it more brown but they have fruit and nut toppings which were just enough to add to the syrup.
Overall it was a fun experience and a nice place to sit and chat. There was not a lot of noise from other guests which was a nice change for other eateries in town. I look forward to...
