I went to Lit Pizza after the Parade in Ponchatoula with my wife, sister-in-law and three nephews and the pizza and value for my money was good. However, we arrived at 9:00pm and were greeted by an employee who before she took our our quickly informed us that they close at 10:00pm. We advised her that was fine and we would eat an run. After we designed our pizzas and calzones I went to the register to order drinks and a couple of beers for my wife and sister-in-law. The gentleman who was ringing us up (has a long tattoo down his forearm) was obiviously trying to close up and was not having a good evening. When he attempted to pour the first beer it appeared the keg was empty and it spit beer. He threw the cup down and it splashed the little beer that came out everywhere (almost on us). He then asked rudely if his could give us something different to drink and was upset when we asked for any of the beer that work as we didn't was to upset him further. We could tell that he wanted us to get soft drinks instead so we could get them ourselves. He did finally pour two different beers and rang us up. He was upset by the fact that we wanted to pay cash. I'm guessing he has already counted the register in an effort to close early. Since we could tell that he was having a bad day we felt like we should be extra nice so I asked him if he could break a $10.00 bill so that I could tip him 5. His response is why I leave this lengthy review. He looked in the cash drawer and realized he did not have change and told me to keep the $10.00 and that he would just prefer to get us through the process so we can eat and leave! I found that to be quite selfish because there were other employees besides him and the girl that remined me of closing time before ordering, that were deserving of the tip and could have used the money during Christmas. So in fact not only did he not want the tip but prevented the other hardworking people from receiving a couple of extra bucks.
As much as I enjoyed the food and atmosphere, I will not be returning to this location in until they can use this review as a coachable moment and the attitudes have changed. We felt like we were doing something wrong and in fact more people came in after us and we left 20 minutes before closing. My wife and her sister teach teach cooking, culinary management and food safety at the local high school and both said that people have bad days but this was just terrible attitudes and a lack of someone wanting to work in the service industry.

The ambiance was good. The drink selection was good including Coke Zero (my favorite), though they did not yet have their alcohol license complete. I had the pizza with cauliflower crust and my wife had the regular crust.
I contacted the company and the cauliflower crust is made with cauliflower, cheese and eggs. There is no flour or nuts in it. It was very good, though I found the upcharge of $4.50 to be a little high. But guess you have to make the decision if your health is worth the extra cost.
They have a great selection of toppings and sauces to choose from. The only downside is that they did not have anchovies, which is by far my favorite topping. The place is starting up, I get that, but I had to keep repeating the ingredients that I wanted on my pizza. The smart thing would be to hand the patrons a pencil and paper with a listing of the topping selections and let them check off what they want. That would eliminate the repeats. Had I not had to keep repeating the toppings and if they had anchovies, I would have given them 5 stars. What I got was one of the best ever pizzas I have eaten. How can it not be? You call the shots on the toppings. Had they added anchovies, it would have been better than MOD.

Over all the other pizza places, this is the place I choose. I like that I can create my own pizza. There are four of us, and we all want and like something different. Plus the price is fair, so it's a no-brainer. I read some of the more negative reviews so I wanted to chime in to help make sure your visit is hopefully not a terrible one. That being said; there are a couple of things that need to be noted to have a more enjoyable experience. First off. I definitely recommend asking for the manager, Mr. Charlie. He has been in the pizza business for many years, and you can tell he takes pride in his work. He will take care with building your desired pizza. If you want your pizza to be delicious, make sure you let them know exactly how you want it. It is a create your own type menu item, and there are near limitless ways to "CREATE" you personal 11" pizza!! If for some reason you are unable to get Mr. Charlie, that's fine; you just wanna make sure you voice exactly how you want the pizza made... if you are not paying attention; if you do not explain what you want; then don't get irritated if you get a skimpy, uneven disgrace of a pizza! Make sure you are friendly and respectful though!!!! As far as sauce goes; I realized I have only had the pesto; its what I like.
