⭐️⭐️⭐️⭐️⭐️ 10/10 Experience at La Fresa Mexican Bistro!

My friend and I visited La Fresa Mexican Bistro for their grand opening, and wow , it did not disappoint!

From the moment you walk in, the atmosphere is stunning. The vibrant pink walls, gorgeous mural, and stylish decor make the whole place feel like a dream , it’s truly a vibe, especially if you’re a fan of pink like I am!

Seating is open, so you can sit wherever you’d like. The staff? Absolutely amazing. Super friendly, welcoming, and easy to spot in their adorable pink polos and khakis. I really appreciate when restaurant staff look presentable, and every team member here looked polished and professional.

Now let’s talk about the drinks delicious! I’m picky about blended piña coladas, and theirs was one of the best I’ve ever had. We also tried the Margarita and Mimosa flights, and yep… we finished every drop.

As for the food: • The Pollo Asado was seasoned and cooked to perfection. • The Camarones Momia were juicy and flavorful — not dry at all (which is rare to find elsewhere). • The Aguachiles had the perfect kick of spice and were super fresh.

We even got to meet the owner and her family — all of whom were working hard and were incredibly kind to us. It really added a personal, heartfelt touch to the experience.

And to top it off: live music from DJ DENVER made the night feel like a full-on celebration.

💖 Overall, the entire experience was amazing from the food and drinks to the people and vibe. I would give La Fresa Mexican Bistro 10 stars if I could. Honestly, I might be a little biased because I LOVE pink, but this spot is a whole vibe and I highly recommend...

I heard about this cute new restaurant thru tik tok decided to try it out. I ordered the kora roll sushi. I did not like it i give it a 1 out of 10. The sushi has way too much rice, the rice was sticky & mushy. It had breaded shrimp on top instead of inside, it was topped off with melted cheese. It was very dry. I had to ask for a side of mayo sauce in hopes it would taste better. It Was not good. Don’t recommend. I also ordered the shrimp tacos. I did like those i give it a 8 out of 10. Also ordered a piña colada which was really good. I would rerun for the tacos & piña colada only i will not be ordering their sushi again. Wait to get our drinks was a bit long. I don’t mind waiting 30mins to get food. As long as i have something to drink. We were sat at 6:02pm didn’t get my drink until 6:25pm. It’s a small restaurant. It was packed but they only had 1 girl working the bar, and 1 waitress. I had already seen the other Google reviews talking about the long wait times & them being understaffed so i wasn’t too surprised. Hopefully they hire more staff to get faster service to their customers. Overall staff was friendly. Would like to rerun on a less busy day. Mind you i came on a Wednesday 6pm and it was busy. What an exciting time to be Latinos and Entrepreneurs here in the Pacific Northwest, especially in the beautiful town of Happy Valley, OR where just a couple of lights away, there’s this new wonderful Latin restaurant called, La Fresa Mexican Bistro.

The moment you walk in, you are immediately welcomed with a smile, calming pink walls, hanging plants with lights, soothing Latin music, a gorgeous painting of Frida which all invite you to celebrate the Latin culture of our community. It was also wonderful seeing our dear friend Kelsey dazzling customers that evening with her Fairytale Face Painting for the grand opening.

Thank you to the entire team for providing such a wonderful experience. As you can see from our photos, we loved our every bit of it. Especially their Carne Asada and Chicken Flautas were so delicious and top notch. Next time, we’re gonna have to try their Fresas con Cremá y Flan.
