Sadly, all good things must come to an end. I’ve touted the roast pork from here as being the best in the state, and I’ve tried every place on every island I could. The cut was consistent with the perfect layering of meat and fat with a perfect crackling; crispy not a football. Since my last visit they have changed ownership and altered the formula.
