Roll 'Em Up in Henderson is an absolute gem for anyone craving delicious Mexican food.

The taquitos at Roll 'Em Up are nothing short of amazing. I tried the ground beef and potato with flour tortillas and "the works" (i.e. all the toppings) -- each bite was a perfect combination of crispy and flavorful with the perfectly-seasoned fillings leaving my taste buds dancing.

The corn in a cup was a delightful surprise with a sweet and savory blend of corn, butter, mayo, cotija cheese, and spices. It's a must-try if you haven't had it before.

Last but not least, the chips and salsa at Roll 'Em Up are a testament to the attention to detail that goes into every dish. The chips were warm, perfectly crispy, and served as the ideal vessel for the fresh made salsa. The salsa itself was the perfect balance of heat and tanginess that keeps you coming back for more.

The ambiance of the restaurant adds to the overall dining experience. The staff was friendly and attentive, and delivered our food to us outside so we could enjoy the beautiful weather.

I've ordered from here a couple of times and the food has been really good. The taquitos are crispy and my food is always on time and it's always fast because this type of food I imagine is not time consuming to make. The taste is good and the price is fair and I definitely recommend this spot especially for a nice and fast, tasty meal. My one criticism is that the product while tasty has not been consistent with the topping style and topping portions. I've had it come with lots of cheese, light cheese, sauces globbed on and sauces drizzled on all pretty like. I also ordered the corn (only once so it might've just been a fluke) and it had like a 70/30 ratio of corn vs toppings so it just felt like i was just eating powdered cheese and hot Cheetos which I didn't love. I think itd be a great side if it came more balanced though. BUT I think all those things could be fixed with one staff meeting to get everyone consistent and overall this place definitely still deserves a 5 star rating. I went in (after a failed attempt at eating elsewhere due to dietary restrictions), and couldn't have been happier over my new finding. I'm not usually in the mood for spicy food or Mexican food, but jeez their food was AMAZING. The hotness was perfect, in my opinion, with just the right amount of "heat" and the perfect amount of flavor. And the fact that they were super patient with me when I asked a bunch of questions regarding ingredients because I have so many dietary restrictions made me feel not bad about asking those questions. They also have a fountain machine with regular sodas that DOESN'T have high fructose corn syrup in it!! (I'm allergic to HFCS.) AND! THEY HAVE RESTROOMS LABELED "All Gender Restrooms"!!!
