I had a chance to go by Vish Hummus, get a little overview of their concept and have a delicious spread! It is easy to tell how genuine their ingredients and their commitment to quality is, from the clean, modern decor of the restaurant, to the poster inside which lists why you should eat hummus and vegan food, to the time they spend making the food after they take your order. Lior the owner was gracious enough to show us their process of making their signature hummus. They source their ingredients from the Middle East, with their spices and chickpeas coming from Israel (yes) and their tahini coming from Egypt (yes). The chickpeas are soaked and cooked to the optimal tenderness and mashed in a machine made and bought specifically for hummus making. They are not playing when it comes to making hummus!
You can taste the difference in the care in the hummus making. I've learned that freshly made warm hummus is exceptional and should really always be eaten that way. We had the Shawarma Salad, which had an addictive melange of textures, from the chopped cucumbers, tomatoes, onions, parsley and nuts and enhancing the meatiness of the sliced Impossible meat. The only drawback was that the raw onions were incredibly strong, so he had to tap out of it after a few bites. The falafel is firm and packed with flavor, wonderful to slide with the glorious hummus and top with a little of their homemade pepper sauce (again, so fresh). The Vish Burek is a joyous celebration of chickpeas and egg---hummus and simmered spiced chickpeas brought beautiful together, acting as a bed for whole eggs wrapped in blankets and fried. The eggs are cooked just long enough to leave the yolks runny and me ogling them as we broke them. If it does not make you like chickpeas and eggs, I question you as a human. The Lentils Rice Bowl was an incredibly satisfying and harmonious dish since it contains tenderly cooked lentils and rice and is paired with the fresh chopped vegetables and that sweet sweet hummus and tahini. The Jerusalem Hummus is the dish I want to have with every meal. Impossible ground meat expertly seasoned with the smooth smooth warm hummus? I'll eat every vegetable in the garden with that stuff. The Shakshuka tasted like they had spent hours making it (still can't tell if they actually did) and was a lovely blend of sweet pepper, spices and tomato to make a wonderful stew like texture to house the poached eggs. The pita and I had a great time swimming in this dish.
I had a chance to try their shakes also, which are not known as smoothies per se since they use tahini in each one, but use smoothie ingredients in each. The liquid is usually a plant milk like almond or a fresh juice. I had the Matcha Detox which was muted in sweetness and fruitiness and perfectly thick, making it the perfect complement to the meal and to take afterwards. I had a taste of the Memory Shake which had lovely dessert vibes with cocoa beans, dates and peanut butter.
I'm telling everyone who will listen to me to go by Vish, because despite all the importing and effort that I told you goes into sourcing and using their ingredients, their dishes are incredibly forgiving when it comes to costs. Their entrees range between $15-20 each, and an order of falafel comes out to less than $6, which is much less than some other Mediterranean restaurants in the area. The best of all? Their menu is 95% vegan without you feeling sad for eating vegan food. The other 5% is their use of eggs, but you can be assured that what is listed in their ingredients is exactly what you'll get. We got 4 pitas with the hummus. Pitas were nice, warm and fluffy, just like a true cloud pita should be. Overall, food was good so no real complaints over here; however, food was very pricey for what it was. $17 on average for hummus is a little crazy. Yes, there are free hummus refills, but they are too little and with no additional pitas... What's do fun about that. Owner seems great and like he really cares, other employees behind the counter not so much. There was one who was either having a bad day or just didn't want to be there. I totally get it, but if this is not for you maybe find someone less 'people' facing.
I would give this place another try and would invite everyone else to do so as well to support small businesses. But for the love of God, please lower the cost a little bit and make extra pitas a standard.
