Though I'm from Texas and TX BBQ is one of my favorite foods, I don't think I'm tribalistic when it comes to bbq. One of the best bbq meals I ever had was in South Carolina, so I went in to Stubby's with an open mind and an open mouth only to be met with grave disappointment. The pulled pork on my sandwich was flavorless, as if it hadn't been smoked at all, rather just thrown into a slow cooker for a few hours. The same can be said of the brisket my wife ate. The baked beans were far too sweet for my taste, though I think that is just my personal preference, since I like the pinto beans that are found in TX bbq joints. The bbq sauce was also far to sweet, to the point where I was worried I was actually eating a dessert rather than lunch. Honestly, this was probably the worst bbq I've ever eaten, but I'm giving it 2 stars because one of the employees chased our car down as we were driving away to give my wife her wedding ring that she had left on the table while she was eating. Initially, I had my mouth fixed for McClard's, but since they were, like so many businesses in Hot Springs that are, inexplicably, closed on Mondays, I set out to find another BBQ joint to scratch my brisket itch. When I walked in, the place smelled like Heaven, with that rich smoky scent one expects in a good BBQ spot.
The restaurant was clean, with a classic southern comfort atmosphere, and the service was fantastic. My sandwich came with a more than generous serving of meat, and when I sat down to eat, the experience went south immediately. I asked for sauce on the sandwich, and regretted that decision with the first bite. I do not like sweet BBQ sauces, and Stubby's tasted like someone dumped a whole bag of sugar into the mix. The meat itself was tender, with a nice smokey finish, and for that reason I was able to finish my sandwich, but lord almighty that was the sweetest (not in a good way) sauce I have ever tasted.

The words "Beef ribs" caught my eye, and l jumped. My rib order weighed about 5-6 lbs, and they were THE tenderest, succulent, fantastic, juiciest beef ribs I've ever eaten! We're visiting from Lake of the Ozarks, and you have to go to KC for beef ribs. They're sooooo hard to find on any menu. My God, these ribs were incredibly juicy, a little fatty, meaty, smoky, dino sized bones. I'd say they were about a foot long. Are they cheap? Nope. But are they worth every damn penny? Hell yeah! The creamy cole slaw was bomb, not too sweet, crunchy & plentiful. The icing on the cake of this experience were the lovely ladies working the speaker and the drive-thru window on Sat. 4.12.25 @4 pm.
