If you are searching for real deal Peruvian cuisine, then look no further than La Guitarra Con Sazon. Other places are either frou frou Bourgeois Peruvian-Latin hybrids that can't completely commit (I'm looking at you Latin Bites), OR they claim to be authentic but use shortcuts, cheap ingredients, and shoddy techniques. La Guitarra Con Sazon serves true Peruvian food, packed with flavor, beautifully presented, and authentically made.
For reasons beyond me, the restaurant was eerily empty when I walked in for dinner. This was my four-year-old daughter's first experience with Peruvian food, and she loved every bit. She annihilated her first Chicha Morada (purple corn drink). She fought me tooth and nail for the cow heart kebabs, more lovingly referred to as Anticuchos de Lomito - my favorite and the best I've ever had.
With one bite of the Lomo Saltado, my man's eyes disappeared to the back of his head. I've only had one other lomo that was better, and that place is not in Houston. My Arroz Chaufa (Peruvian fried rice) was completely riddled with all sorts of seafood: mussels, squid, large shrimp, and even crab in its shell! The unique flavor of this fried rice made it apparent that the other arroz chaufas I'd tried before were just impostors. And because every dish was such a home run, I felt obligated to order the Ceviche de Pescado y Camarones for good measure. Peruvian ceviche is one of a kind because of the Leche de Tigre marinade. La Guitarra's leche de tigre is perfectly complex; pairing this with the sweet potato, choclo, and cancha creates an unbeatable ceviche that will leave you in awe.
I love Peruvian so much that I lured one in and married him - so I would say I have plenty of experience eating the food. Papa a la Huancaina, Yellow pepper cream and potatoes: The right texture and cheese flavor garnished with letucce. (We had to ask for the traditional boiled eggs to crown the traditional dish name in honor of Huancayo, a beautiful city in the Peruvian Andes. A good 8.5
Papa Rellena, Stuffed Potatoes: you will see many potato dishes in the peruvian cousine, because this tuber is originary from the land of the Incas. This dish comes to your table with no one, but three Papas Rellenas in a plate. Well done boiled potatoes are fried and stuffed with grounded meat, raisings and spices. We give them a 8.
Lomo Saltado. Sautèed loin with fried potatoes. This child of the marriage between the South American products and the Chinnesse cousine is well composed in the kitchen of Guitarras con Sazón a peruvian restaurant that is fighting the pandemic with flavor and respect for the health guidance about social distance and masks. I cannot recommend more any other Peruvian restaurant I've visited to include those in Dallas. The aji de gaillina and any ceviche is a must. Sample the chips and salsas. The green sauce is like a creamy cilantro sauce. I don't like cilantro but eat the sauce until I'm out of chips or out of sauce. The reddish orange sauce is spicy. True to the aji peppers, there's incredible heat, but very little residual burn. Especially if paired with a great beer or cocktail, or even a soda.
