This was our first trip to Hildegard's. It was not our first attempt to go there. On a couple of previous occasions, there were no parking spaces in the lot at lunch. The lot is small and cramped and shared with several other businesses. This means it can be crowded and often is.
Entering the restaurant is a little confusing. The entrance is near the end of a walkway and there is one door only. Just outside is a small outside dining area and a small display of beer and terra cotta planters with small plants.
This is not a chain restaurant and, having read a number of favorable reviews, we were anxious to try it.
Having served in the Army and had a tour of duty in Frankfurt, Germany, I became a fan of German food. There were several small, inexpensive restaurants outside of the Kaserne where I lived. After a few visits to several local places, I started to learn what I particularly liked and likely to be on the menu.
Hildegard's German Cuisine is authentic—at least based on my experience.
On this occasion we shared a dish of Classic Chicken or Chicken Schnitzel. The chicken was tender. The breading was a light brown so it was not overdone. The taste was excellent.
It was accompanied by German potatoes. Again, they were cooked to perfection. They were lightly browned and not overdone. They were not salty as is sometimes the case with these potatoes.
The servings are quite large. I saw a number of patrons leaving the restaurant with a carry-out bag. We would have had a carry-out bag but concluded one entree was enough for two people who (try to) avoid overeating. It was plenty of food.
The bread had good flavor but some of it was stale. There is nothing better than the dark bread in a German restaurant when it is very fresh. This would have been delightful but must have been sitting too long to remain at its peak.
Having taken a look at the pastry in the front of the restaurant near the hostess stand, we asked about dessert. There was one piece of Black Forest cake left. We also split this item. It was very tasty. Again, it was not the freshest cake I have eaten but the flavor was excellent as was the appearance (see the photo).

While visiting Redstone Arsenal and Huntsville, we decided to try one of the three German restaurants advertised - we picked the one with the best reviews so our expectations were high going in. Difficult to go against all the wonderful comments we read, but we gotta mention while the food was fair, the hospitality was exceptional. Our Servers and Hostesses were so friendly and attentive one could overlook the quality of the food and still have a pleasant dining experience at Hildegards’.
Granted, we came in on an off day - not the traditional Friday, Saturday crowd and the restaurant was about one-third full. Menu looked great with lots of German food options and the beer selection decent. We ended up ordering traditional German meals - the Jaeger Schnitzels and the Corden Bleu.
The Jaeger Schnitzels were tender; however the thick brown gravy with mushrooms was super salty, our consensus was the mushrooms were probably canned and the gravy possibly some kind of pre-made package. You definitely couldn’t complain about the portions - the schnitzels are about as big as the dinner plate. The Cucumber Salads was tasty and flavorful.
On the other side of the table, the Veal Cordon Bleu - Black Forest ham and Swiss cheese, with Red Cabbage and Pan Fired Potatoes. The breaded veal tasted as though it had been sitting for awhile in the warmer - sides were soggy and the veal a bit chewy. I’m not a cook, but my guess is it was pre-made earlier in the evening and sitting in a pan waiting for someone to order.
In actuality, both schnitzels seemed pan fried, but had the texture and presentation as though they were not freshly made with our order and had been in chaffing dishes or sitting in a warmer.
For dessert, we had the Black Forest Cake and without a doubt - this was the hit of the evening for us. That, and the Bitburger Radlers beers were awesome.

At 8:15pm she came with our drinks said she would bring our bread out to us and asked if we were ready to order. We gave her our order she was coming out with our bread a guy asked her where the restroom was she with bread in hand showed him where it was came to us sat the bread down When we gave her our order she said I get 3 sides I ordered the pork Schnitzeland fried potatoes my husband ordered the sampler. We didn't get our food until 8:50 pm when she brought out our food I asked where my soup was she said I didn't order soup. I said yes I did you told me it would cost extra for the soup. She looked at me and acted I was lying to her. I said you told me the soup would be extra.. she said no you are mistaken you did not order soup, then she looks at her ticket and said oh it was by your plates I just didn't bring it out. My food was cold the soup was cold. I asked for extra butter and it wouldn't melt on the potatoes. Her name was Anglia worst waitress if she would have explain that maybe they were under staffed that day o the problem we would had understood. There was a man waiter that saw us sitting with nothing in front of us asking us if he could get us our drinks. I told him we gave Anglia our order. He even thought we sat there a long time. She asked me if I would like more ice for my tea I told her that would be nice. It never came. The food was good for being cold. I hope she has better day's to come....
