Three Pigs BBQ — Restaurant in Independence

Well guys , what can I say? Let's start at the beginning, my daughter and I were very excited to try this place and have been for awhile, apon arrival we step out to walk over to order and there was an adult diaper full of poo disintegrating in the parking lot which is not the establishments fault however it was very off putting as a start . When approaching the BBQ truck we were not greeted with kindness you could cut the tension in the air with a dull spoon , It kinda killed our experience to be honest with you, the lack of customer service was unsettling to say the least. However I thought everyone has a bad day from time to time and remained optimistic which indeed proved to be a challenge with the unthrilled single answer responses we did receive as if we the customer were a bother asking them what their best sellers were as it was our first time there.. well we tried the sampler platter and I added half a pound of sausage to my order as well, 46.00 later and a 2.00 unwarranted tip because I always tip something even in a horrible experience whiched this proved to be unfortunately we tried the BBQ. Well let's start with the sides we had the coleslaw rated at a 4 out of 10 basic vinegar base slight after taste it was fair, the Mac n cheese was a 5 out of 10 the cheese had good flavor but the lack of seasoning was very disappointing the noodles were over cooked it's just fair basic, then we had the cheesy corn it was a 5 out of 10 tho the flavor of the cheese was good the corn was from frozen and definitely overcooked and the skins stuck to your teeth again , lack of seasoning rated basic, for the last side the baked beans were a 8 out of ten very good I was quite pleased rated great, the meats starting with the sausage it was very tasty smoke flavor was great rated 7 out of 10 the skin was very tough rubbery I most definitely had to peel them , the burnt ends were hit and miss some juicy, some like pebbles ,some were burnt beyond burnt ends 5 out of 10 lack of seasoning, last but not least the brisket , it was very thin I mean paper thin, dry lacked seasoning but the smoke came through on this one there was not any juice it was over cooked no bark which I found to be so odd considering the smoke flavor was very prominent. Liquid smoke perhaps or cut so thin the bark fell off maybe but left a smoke flavor hmm 🤔. I didn't know what to expect it was not great it was just average in my opinion and basic. Like if your mean uncles were at a BBQ pi**ed off at the world had one few to many beers over cooked everything over all, under seasoned everything but the one good uncle brought the beans and he made the sauces and did it right. The sauces were great 👍 9 out of 10. Definitely saved the meal. Would I go back? No I am sorry to say that I would not. I wanted to love this place...

First time I tried this place was amazing, I purchased the Rib Combo for a little over $15 and was impressed with their spicy BBQ Sauce and sides. So a couple months later I decided to take my girlfriend out and go all out. We spent $57 trying almost half the menu and ordered extra BBQ Sauce for everything on the side. We recieved all of our food from some older guy who was less than pleasant and some young skinny kid who didn't care much either, but I didn't get to speak with him at all. We recieved all of our food, with decent portions like we had hoped and when I got home with my 1 bag of food for almost $60, I should have known I was gipped. All of our food came un-sauced and in our 1 bag, we recieved 1x 2oz portion cup of normal BBQ Sauce. We ordered everything with Normal BBQ on it and then PAID extra for sides of Spicy BBQ on the side for EVERYTHING. Normally i'm not one to complain, or leave reviews, but this happened over a month ago now and I just realized I can review a truck on the side of the road. It keeps me up some nights wondering how a BBQ Truck can hive somebody who paid $60 to take his gf out to try this awesome food he recommended, order EXTRA BBQ Sauce and get no BBQ Sauce at a BBQ Truck. I've always heard great things about this truck and after walking around santa Cali gon and finding no new food Iwanted to try, I decided to stop at the truck. The service was absolute trash. The guy was rude, no eye contact (which isn't a huge deal), not an ounce of customer service skill at all. On to the food, I got the two meat meal with brisket and turkey with beans and corn as a side and a half slab of ribs with Mac n cheese and potato salad. The ribs have ZERO seasoning on it. Very bland. The sauce is good and is the only way they might get eaten. The turkey is very dry but the brisket was decent. Again, you have to eat it with the sauce. I haven't tried the sides yet but I don't have much hope for them either. Complete waste of time and money. Even though the service was garbage, I still tipped and even asked the guy if he was having a bad day. He said "nope just got here" who shows up to work already in a foul mood? I will not be returning here and will not be recommending...
