First, let me say the beer and wine selection is excellent.
I brought an issue to their attention during and after our visit on April 4, 2025.
I have swallowing issues and pointed that out to management when I sent them a message on Facebook Messenger.
"The Brisket Poutine has been something I've been able to eat on three previous occasions. Today, when my wife and I ordered it, the meat was not tinder at all. It had the consistency of beef roast, nothing like brisket. I can eat actual brisket.
We pointed out to the server that there wasn't much to speak of as far as cheese curds (in the Brisket Poutine), that the meat wasn't as tender in previous times we've had it, and the whiskey demi came VERY limited. Our server offered to get us more and 10-15 minutes later it finally arrived at our table.
The black pepper burger was ordered pink, but I found it to be a little less the ideal. I didn't complain about it because I realize I have issues other people don't normally suffer from (with my swallowing), but I will say I've been able to eat burgers at GCB Co. before.
I would have chalked the hold thing up to "it was me" but when I received the check, I was charged $2.50 for the whiskey demi, which should have been plentiful to begin with for a $17.00 appetizer.
Our bill was $63.47. I left your restaurant still hungry and not wanting to make a scene. So, I subtracted $2.50 from the bill, then calculated a 15% tip off of $60.97 then left the server a $10.03 tip. I'm assuming it's policy to charge for "extra" but that appetizer was sub-far at best. You owe that server $2.50.
If that was brisket, whoever prepared it overcooked it. My wife loves going to GCB Co. I want to take her back but it is frankly expensive for two adults to share an appetizer, a meal (we shared the burger and fries), one flight and one glass of wine, only to walk away feeling ripped off.
Please do something to make this right." Management offered me a credit of $2.50. I'm not sure who's being petty here, but I clearly articulated what was wrong and told them to keep the $2.50 if they aren't going to make things fully right, so here I am writing this review.

Def enjoyed the beer selection and modest, fair prices on that. The main menu looked like solid pub fare, and I wouldn't hesitate to go back if in the area. Not sure about making a trip to it though.
Overall ranked at 4 stars, based on the what I can tell is a solid operation, but the Restaurant Week one was below par. Pacing of the courses was WAY, way off - we received our mains before halfway done with appetizers and got the desserts sent out before we had barely touched our mains! Seriously, we almost didn't have room on the table. The so-called Birria Flatbread was just a cheese pizza with a hint of meat on it - not exaggerating, it barely had any meat at all. It was a fine cheese pizza - but woefully off from the description. The Hot Honey Chicken was really good, maybe needed just a wee bit more salt but that could just be me, though sides for that were almost non-existent - three potato wedges on top of a few wilted greens. All three desserts were very good, but it was a bit unfortunate they had to sit so long. Appetizers were top notch. So start and end were solid, beer and mixed drink was good, but middle mains were a little off and the entire rushed pacing really detracted.
Overall - def go for a drink or happy hour, good food if close, but might avoid for Restaurant...

The waiter was attentive and didn’t make us feel rushed. We ordered the baked (can order fried as well) pretzel and cheese curds. Let’s just say the apps were gone pretty quickly lol. The food presentation was unexpectedly well put together and made the experience even better. I have a wheat allergy and didn’t have a chance to browse the menu ahead of time. When we got there I was able to easily pick out what I could eat as (GF) was listed next to menu items and they offered a delicious gluten free bun alternative (normally dry/tough, but this was soft and went great with my sandwich!). The others in our party ordered a flatbread, chicken club, and a burger. Food was hot, fresh, and came out quicker than expected. Obviously, everyone tried their fair share of beer, flights, and cocktails. Great flavors and we enjoyed our servers knowledge on the drinks and his recommendations based on our preferences. Even during a crazy time of having to wear masks everywhere it was nice to have an evening out and feel some type of normalcy.
