I will admit that I was not looking forward to going here. I saw French food and thought hoity-toity, too much butter and fat. My husband dragged me the first time and I have been begging to go back ever since. We have now been twice and each experience is always different, but in a wonderful way. We do the 5 course menu with wine, so they perfectly pair each course with a wine that I have never and probably will never hear about again. But like you hear about on food shows, it pairs perfectly and it enhances the dish that you are eating. The people running it are a husband and wife. He is the cook and she is worthy of a sommelier title and pairs the wine perfectly. Together, they are a power couple of the food world. I was shocked that Jacksonville had something so great!
I have tried more new foods and drinks than anywhere else and found that I liked it. I will admit that I still do not like cucumber, but one of the hors devours/appetizer plates had a bite that I enjoyed in spite of the cucumber on it. What I love best is that if you do this menu tasting, they do NOT tell you what you are going to get. It is a surprise every time. For those of you who are allergic to food- no worries! They find that information out at the beginning so you can still have the same wonderful experience.
I cannot go into more detail without spoiling the experience, but it is divine and totally worth it. It is a little more costly, especially if you get the wine pairings, but you will not regret it in the least. The food on the tasting menu is smaller portion sizes, but it takes into consideration how light or heavy the food is and you will not leave hungry. I recommend this to everyone! With a culinary background, along with much travel around the world and this country, i can tell you with absolute certainty, and been at this restaurant prior and had amazing food and service, this time was so beyond the worst drinks, food and service I've ever experienced. Literally, from the time we stepped into the bar, the bartenders were touching their noses, hair, face, clothing while making drinks. Food came out room temp at best... porkchop was mostly raw and when I said I think this might be undercooked I was told no, that's how we serve it...pork should never ever be undercooked ever and then when I watched them take it back and handle the food with bare hands and stick their fingers near their mouth I think I was in shock then they checked the temp with their thermometer and agreed it was undercooked proceeded to slice it up more and threw in a pan and put it under the broiler and then took it out while the other cook took my plate towards the back and touched his hair and then his nose and then back to my plate that had food on it. The wait staff was watching me watch them and looked back and did something and looked over at me again and then I turned to the bartender and said please cancel it..im done. I'm appalled what I'm watching and I said thank you for your service, I'm done. The menu had 2 substitutions on it. When you pay 245 per person, it can be a bit of a damper to have things you were looking forward to removed from the menu. The food is always pleasant though, despite the change in menu day of.
We started our experience with Cocktails, I had the Moulin Rouge and my spouse had the Jamaican Dogwood. Mine was tart and sweet, in perfect balance, and my spouses was very rum forward with little sweetness.
The Maine Scallop was cooked perfectly, despite it taking the place of monkfish on the menu. I was thoroughly excited for this, but I do enjoy Scallop as well so it was not a huge deal.
The chicken ballotine was slightly too salty, but it had complex flavors. The star of the show was the Australian Wagyu. Executed to the perfect temperature and the oxtail raviolo was supple and packed full of flavor. The parsnip was pureed and was extremely smooth.
Our dessert was the other substitution on the menu. Instead of chocolate honey ganache we were given a dark chocolate tart. I do not like dark chocolate so the dessert was a bust for me, but the cherry ice cream it came with was creamy and delicate.
