Thyme Machine in Jacksonville offers a delightful take on Lebanese cuisine, with bold flavors and high-quality ingredients. Everything on the menu looked so good, but I have to say the shawarma beef was my favorite. It is an absolute standout with its savory, slightly tangy flavor profile paired with fresh vegetables and tahini. I was also able to try the shawarma chicken, and it was just as flavorful, with tender chicken complemented by pickles and an excellent garlic sauce.

The hummus is also a "can't miss" item; it is smooth and creamy with a perfect balance of lemon, garlic, and earthiness. It pairs beautifully with the pita bread they make from scratch!

The staff is very friendly and helpful and provided an excellent experience that further complimented the amazing food.

I recently had the pleasure of grabbing breakfast from Thyme Machine, and I have to say, it’s a culinary gem on wheels! From the moment I walked up, the fresh aromas of Mediterranean spices had me hooked. The staff was incredibly friendly and helped me pick out a fantastic meal.

I tried their cheese and zaatar saj and it was absolutely bursting with flavor. My friend had the turkey saj, and it was some of the best I’ve ever tasted.

Everything is made fresh to order. The best part? It’s reasonably priced for such high-quality food. Whether you’re a fan of Mediterranean cuisine or trying it for the first time, Thyme Machine is a must-visit. Jacksonville is lucky to have such a fantastic food truck in town!
