The strip anchored by the Stater Bros in Mira Loma is home to a space that has been a Mexican restaurant for decades, though not always the same Mexican restaurant. In the remote past, the Green Burrito chain occupied it - slinging staples from the Cal-Mex repertoire. A place where each of my elementary school teachers seemed to return from their lunch breaks at a minimum of twice a week. It was there where I had my first ever Baja style fish taco. In the more recent past it was called Casa Diaz, serving a bill-of-fare that was less "Cal" and more "Mex." I liked their chicken mole burrito, wet with extra mole. (Come to think of it, what could be more Cal-Mex than a wet Mission style burrito?) The current iteration is called El Chivito; and is arguably the boldest restaurant in the history of Riverside County. El Chivito is a specialist. It is a Jalisciense birria spot. You get birria de chivo, heaps of it in a bowl, a mound of it on a taco, and/or a portion of it within a mulita. Entering El Chivito, you find yourself face-to-face with a woman masterfully stamping out fresh tortillas. Another woman instructs you to seat yourself where you wish. Go find a comfortable spot on one of the unlacquered pine benches. Order some goat. The tortillas are rich with earthy corn flavor. The birria itself is a full court press of goat funkiness. The consome is particularly special due to its wholesomeness. Eschewing the traffic light red variety of consome, imbued with a slick of fat, that took over all the socials in recent years, the broth here is clean, allowing more of the goat to shine. We are always looking for great places to eat, So today we decided to Try EL Chivito Birrieria. This place did not disappoint the ladies behind the counter were extremely attentive to our needs. We ordered 4 pounds of Birrieria, which came with consome and freshly handmade Tortillas and one large horchata. The meat was super tender, the consome was very tasty and did not disappoint. The customer service is very friendly and both in English and Spanish. The only issue I could see for potential customers is if they are not ready to wait for a table for awhile as it does get pretty busy if one is waiting to eat in. There are no drink refills as there is no drinks fountains only bottled soft drinks and also few aguas frescas though they are very generous cups. The birria itself appears to be a mix of goat and beef and has a good seasoning taste and presentation looks 'camera ready' when cilantro and onions are added which they include.
