Bluefin used to be Cho Sushi. Sorry. Was not impressed. Went for lunch. Arrived around 12:30 and expected to have a busy crowd. We were two of four people in the place. Not 4 tables, people.
Second thing I noticed beyond the lack of patrons was the furniture. The nice, comfortable padded seats, cushy booths and modern tables have been replaced by hard seats with no backs and rustic wood tables. Not at all relaxing or comfortable. We almost left at that point, but decided to stay and see if the rest of the experience would make up for the furniture.
We were seated promptly and with a cheerful smile from the hostess. There’s one star. Then a young lady approached us to take our drink order. Very difficult to communicate. Now, I get that folks come here from afar and need employment, and that she was trying her best. But working in this environment requires clear communication skills to avoid frustration between server and customer. Sadly, an issue, but she was very nice and tried very hard.
Drinks were fine although my iced tea had such a small amount of ice that it was not cold. We ordered sushi including combo plates (wife’s a lunch plate and mine dinner) and a specialty roll to split. I wanted to ask for a substitution for the roll that came with mine, but the comm issue would have made that near impossible.
My wife was served miso soup. After she finished I asked the server why her less expensive lunch plate came with miso and my $32 plate did not. She returned a few minutes later with miso for me. That was nice.
This is where it got weird. Wife’s meal arrived with the shared roll as I was finishing my soup. I waited until she was completely finished with her meal. Then, 15 minutes after she was done, finally came mine. If they were busy at all this would make more sense. But nobody was there. Weird. Honestly the portion I got was small for a dinner plate. Then they took turns trying to take our plates. Before we were finished eating. Really? Three people came over and grabbed our plates. The first time a woman actually grabbed my wife’s plate and tried to walk away with slices of her roll on it. It’s like this place is being run by folks that have no restaurant experience at all.

We didn't make any reservations but had no problem getting a seat. This was a Friday evening so sometimes while it's great to walk in... if they aren't that busy, it might say something about the quality.
We started off with drink orders; my friend ordered an Aperol Spritz and the server came back and said the bartender didn't know how to make it. Apparently, on their menu they call it a Valleria but in the description, it states it is an Aperol Spritz.
We ordered spicy edamame and while it was okay (how can you possibly make bad edamame) they didn't bring it out until after they had brought out all of the sushi.
For sushi, we ordered a traditional Philadelphia roll and tried the 620 Roll and Bluefin Special Roll. The Philadelphia roll was delicious. One of the best Philly rolls I have had since coming to TX. The Bluefin special was one of those rolls where they just put way too much into a roll. it had some sort of sauce on it and when you get it, it's saturated in this sauce and the roll is somewhat soggy. It was okay tasting, but again, just too much and the sogginess was bad.
We also tried the 620 roll and much like the Bluefin Special, too much sauce. Not a bad roll, but maybe get the sauce on the side? Just don't drown the roll in the sauce.
I guess you need to ask for the bill. We sat for quite some time even after they had cleared our table and just waited for them to clear the table but ultimately had to ask. We were double charged for a miso soup but they did take it off the bill. Great prices I will say. They also have Ramen dishes that it might be worth coming back to try.
I am sure we will be back but probably just to stick to the more traditional rolls. Just not a fan of sushi rolls jammed with so many different pieces and fish and then drowning in some sort of sauce. They should have brought out the edamame long before we received the sushi. ...

But we went today and it was just quick lunch but idk who that lady was but she was very adamantly mad or disliked us for not leaving a tip and spoke to my sister and I only a table for 2 people for a good 5 mins about us having to leave tips because they didnt get paid a regular salary and relied on tips. And kept saying that when people dont leave tips they have to ask if service or food was bad because no tip was left. Now And i completely understand that tipping is needed but we grabbed something so quick and didnt spend even an hour eating as we had to wait 20 mins for food and only had 20 mins left to eat it all. But i was taken-aback by the 5 min speech that lady did to us. we paid with cc and was like well you can leave cash tip “if you want” never had a server do this to me any where.
