Let me start with the positive, the service and atmosphere was great. Food came out quickly and everything looked fresh however that was the end of my positive experience. First off I ordered the steak and brisket pho, during ordering came to first problem, only two sizes? Why? Nearly all Pho restaurants have three sizes and this leaves me still hungry with a small or over eating in a large. Second at the table the only sauces were hoisin or Sriracha. Where is the sweet chili sauce, soy sauce, salt or even worse where are the napkins? I like my pho spicy which will cause my nose to run and I only have the one napkin my utensils came in. Then the utensils every pho location I have ever been to provide you with a dish for your ladle as you will need somewhere to set it down, not here.
So those are the small things that one can get past if the food is great yet there were problems here as well. The most important part of the pho is definitely the broth and while not bad was lack in salt flavor and was overpowered by another ingredient that I couldn't quite put my finger on. It wasn't terrible but definitely not a recipe I would prefer to eat again. Now on to the meat, while it was good the pieces were very thick making it hard for the broth to cook the meat through properly leaving a very chewy unwelcoming texture. I had some pieces nearly half an inch thick this is completely unacceptable. And lastly the noodles were not cooked through and were very tough also leaving a bad texture and flavor in the mouth.
I have been to nearly 100 different Pho locations in the Denver area and put this place near the bottom of my list. There are other places that have just as good service with much better tasting soup. Sorry I will not be...

I ordered spring rolls (cha gio), warm sake, and a pork vermicelli bowl. I received cold sake, but decided to drink it anyway after not being able to catch the server's eye again. (There were no sweeter wine options that would have been appropriate with my meal.) The spring rolls were excellent, although they were served with a fish sauce blend for dipping, not a vinaigrette, which I had been interested to try. The noodle bowl was probably the most disappointing. It included the same sauce as served with the spring rolls, which lacked the sweetness and chili paste as is typical with dish. The pork was cooked to dark grey. The noodles were thick and curly, not rice vermicelli. There were maybe 2 bean sprouts in evidence. The iceberg lettuce they used was yellow with hints of brown. The carrots were very thickly cut. The cucumbers were delightful and the only truly fresh thing in the bowl. It lacked any other herbs aside from spring onions, which were either sauteed (I hope) or wilted. It was edible and filling, but lacked the flavor complexity that is typical of Vietnamese dishes. The quality of the food was...pretty subpar. I was expecting a little more flavor from the pork and the nuoc mam/fish sauce. I was also hoping for a little more char and a more prominent sweet-savory flavor from the pork, but it tasted okay at best. The fish sauce was pretty bland, and I was disappointed that it didn't have any chili or garlic in it. The veggies just consisted of a small portion of diced carrots, bean sprouts, shredded lettuce, and cucumbers. It didn't taste super fresh, but it was passable. I think the only thing that was fine to me were the vermicelli noodles.
