I ate here for the first time with a few co-workers, during lunch hours on 18 Oct 2023. I've had my fair share of brew houses and pubs in my home city of Las Vegas (Nevada), and unfortunately, my overall experience with this place didn't tickle my fancy as much.
I ended up ordering the All American Burger (added mushrooms) with fries. Although the presentation of my meal, along with the fries were outstanding, the burger itself was less than adequate. Whenever I eat a burger, I don't like to have a heaping amount of condiments in it, but sadly enough, there was so much of the Roasted Garlic Aioli and Santa Fe Mustard to which my burger fell apart after the first bite. I know some may enjoy their burgers like that, but I'm not a fan of it - I had to eat the rest of the burger with my fork.
The service from this restaurant was severely disappointing. Well, I can't say 100% that the restaurant's service was awful or if it's due to the server we had. A couple of the issues were: (1) our server forgot to bring drinks for 2/4 people at our table (we had to remind this person twice); and (2) one person ordered the Beef Nachos and dismally for us, we didn't get informed about not having beef on hand until 5-6 min after we placed the order (not such a big deal to some people, but when you're stopping here during a work lunch, you're hoping to get faster service). Not to mention, this should've been communicated to the servers ahead of time and as a result, the servers can inform their customers right away.
On a positive note, from the feedback I received from our group, everyone's food was adequate; one mentioned, "It was great!" The price-to-quantity ratio is reasonable and even though my initial experience at this place wasn't as superb as I was hoping it would be, I am willing to try it again if/when I visit the area in the future. I try not to eat out during the week, but Monday was my birthday, and I was in the mood for some southern comfort food. We got there just before 5 and were seated right away. Our server was the woman with the bright blue hair, who by the way is awesome. All the staff at Pajarito Brewpub are great, so it isn't like you'll have bad service from anyone there, but she is my favorite. I ordered the fried chicken and my wife ordered the Reuben. If you're a fan of Reuben sandwiches, theirs is not as good as mine, but for being 2000 miles from the center of the Reuben universe, it isn't bad. We aren't here to talk about Reubens though. We're here to talk about fried chicken. I can say that this was the best fried chicken I've ever had, and not feel like I am stretching the truth. It was perfectly cooked, had a really great breading, spiced just right, crispy on the outside, tender and juicy on the inside. I feel like there's a highly inappropriate joke there, but I'll spare you... this time. I'm still not 100% sold on the Mac & Cheese side. Not that it was bad, it was great. I just don't usually think of Mac as a side. The collard greens were surprisingly good, which I only say because I usually think of collard greens as something my dinner eats. The cornbread... Comes with honey butter. Do yourself a favor and don't skimp on the butter. There's plenty.. just slather it on there and enjoy the excessiveness of it all. I'm trying to keep this relatively concise, so I'm not going to go on and on about how great the fried chicken is. All you need to know is that if you after 6:15 they will probably...

Being the only actual brewpub in town doesn't mean that you can treat your customers the way you do, thinking that they will come back again and again no matter what.... I was at Pajarito on a Monday evening. They didn't any have beers on tap, were in the process of changing them and hooking them up, so the only options were the battled and canned beers of other breweries coming from a fridge. No one had any idea on what they had exactly, not the bartender nor the waitress. I could walk over and try to read them from the distance, try to decide which one I want. But if I had questions, I got the attitude... like seriously, thank you for making me feel bad, feel like a burden on you, for deciding to take my time to visit your pub, to spend my money on "your" beer and food... yeah, I shouldn't ask questions from the bartender slash owner of the place, it's totally my fault... I should have seen that he was busy with doing nothing... Then there was the food and the service. The food is mediocre, period... not bad, but overpriced. However, the service is under the table... Had at least three different servers over the period of about 2 hours, and all of them had attitude problems... being sarcastic, not caring or not being attentive, again making me feel like it's my fault for stopping by and making them do something, wasting their time... it's simply ridiculous.
