Great hidden gem in LA! My girlfriend is a celiac and I'm, well... not. We both love pizza and constantly search LA to find a spot where we can both get pizza we love. Well, we found it. I ordered the NY style triple sausage pizza and it is one of my favorite thin crusts in town. Loved it. We called ahead the day before and spoke to the owner about his gluten free style. Diego is extremely kind and answered any questions we had. He imports his gluten free flour from Italy and makes the dough himself (as opposed to a lot of shops that order the same GF crust from other companies). His GF pizza is Detroit style because it's made in a protected separate pan. We could not tell that this crust was gluten free. It was perfectly fluffy on the inside with a nice crunchy outside. I'd love to do a taste test side by side with his gluten Detroit style, because I doubt I could taste the difference. Now, you DO have to call ahead a day before for the GF crust because he makes it special just for you and needs the dough to proof over night. Call ahead, he's really nice and will take good care of you. Hopefully one day he'll get enough Gluten Free Business to prep the dough constantly so you won't have to call ahead, so spread the word! After parking, we walked in and met the owner. We wanted to try the Brooklyn style and the Detroit style so we ordered 3 pizzas and an order of wings. The dozen Nashville hot honey wings arrived with house made ranch first. They had been brined and cooked fresh to order. The spices and honey stuck to the crispy chicken skin and the meat was so juicy and tender. We knew things were off to a great start. The pepperoni, sausage, jalapeño, and garlic pizza came out next. It was incredible. The Margherita pizza was next and it was delicious. The Detroit pizza came out and the sauce and cheese complimented the house made focaccia style crust perfectly.
