Karibe Mexican Grill — Restaurant in Madison

I do not post negative reviews after 1 bad experience because sometimes it’s just a bad day. However, we’ve been here 3 times and every time something weird has happened. Today, we arrived and there were 4 other groups waiting to be seated with no employees in sight except the person bussing tables. He made no acknowledgement of the people at the door or any attempt to let the hostess know we were all waiting. There were plenty of empty tables but they were not cleaned off and were not being cleaned off with any haste. Once seated our order was taken but we were informed that the kitchen was backed up which would be fine however, after 40 minutes with no food on our table our waitress came by to let us know that they ran out of rice. There’d be more in 20 minutes. A Mexican restaurant out of RICE is like a pizza restaurant saying they ran out of pizza sauce! She offered fries as a substitute which was good, but I was wanting Mexican chicken and rice, not chicken on a bed of fries with queso on top. At least 2 other tables got up and left, disappointed at the wait and service. Other times we went, service was slow, they were out of potatoes once by noon on Sunday, which they only serve on Sundays between 11 and 3 for brunch. I would think they’d make sure potatoes were in stock for the one day a week they serve them. Another time, we wanted to order fried ice cream as a treat and they were out of whatever breading they use and couldn’t make any. On that same trip the rice tasted a bit odd as well. Food is more than enough. Excellent flavor, large portions. They have the best refried beans of any place I have been in Mississippi. I had several different options there and not one of them have disappointed. Yet every time I’m there, the waitress is horrible. You have to stand up and get her attention for a drink, you have to ask her for to go plates, napkins, you have to ask for your check, you have to ask for salsa, The most un attentive waitress I have had every single time I’ve gone. I will continue to go, but I will definitely get a different waitress. Marleny needs training. You can understand if this is her first waitressing job and she’s only been there a couple of weeks, but I have been there several times over the past couple months. Went in one Wednesday night with a friend and they were open. Figured we would try it out, and I am glad we did. They weren't incredibly busy. The atmosphere was very welcoming and nice. Music isn't too loud, and overall it is a rather relaxing restaurant. They have their own sauces that are home-made, and they are very delicious! I ordered their Rice Lover's Wednesday deal of Karibé Rice with steak and chicken. It wasn't long before we received our meals. Most restaurants do not season the meats. Karibé perfectly seasoned the meats both in their own way. It was great. Only issue is that there was a tad too much queso on the plate, but that is a MINOR issue.
