Our family is staying in Kaanapali for 9 days and are thrilled to have tripped across Fond Maui only because we decided not to wait for hours to eat brunch at The Gazebo. Fond is now our favorite restaurant in Maui, hands down.
For brunch, I had the silog bowl with house-made sausage (longganisa) ... basically garlic fried rice, a sunny-side egg, and a choice of meat/veggies (there's also adobo and salmon). Yum! The longganisa was savory and flavorful. My wife had the Hawaiian omelette, which had Portuguese sausage, onions, cheese, etc. ... also quite tasty. Our 10 year old daughter had a short stack of 3 enormous and fluffy buttermilk pancakes as big as her head ($6!). Meanwhile, her twin brother smartly decided to eat what the rest of us couldn't finish while ordering sides of bacon and miso soup.
We were so satisfied with brunch, we decided to cancel a dinner reservation elsewhere and come back two days later for dinner. Dinner was AWESOME. We started with a "bento box" appetizer that apparently changes according to what's fresh and in-season at the time. Ours had four compartments: deviled eggs, beef skewers atop pickled vegetables, grilled shrimp atop garlic noodles, and a poached egg atop a potato croquette.
The main courses are meant to be shared, though they can be ordered as half servings. We had a full order of the miso salmon (12 oz.) with pickled cucumbers and a half-order of the manila clam pasta, alongside a side of sauteed kale. The miso salmon was to-die for: a light sweetness balanced out the miso, and the fish was grilled to perfection. We killed all of it so there wasn't a noodle, sliver of garlic, or shred of kale left over.
AND we are going back for dinner again tonight. We gotta try that steak. We're just bummed we won't be here for the upcoming Wednesday to try their fried chicken night.

This is a must stop for excellent and reasonably priced food. Heck the food prices are like mainland prices. We ate at few much pricier restaurants on Maui, Fond is definitely on par or better with the food.
1st time we stopped in for a late lunch, I had the seafood tsunami, the fish and shrimp were cooked to perfection, at the time I thought it the best cooked fish I've ever had. My wife had the garlic shrimp bento box, she loved it. We also had a couple of appetizers and drinks, all excellent. Half the time I get fish or shrimp, its over cooked; two other times on the island this happened (and at more expensive places). Not at Fond, this dude can cook a fish.
2nd time we lucked out and were able Chef's counter. Awesome food and fun experience. The food was excellent and Jo Jo explained the ingredients and was happy to answer any questions. One of the dishes was an unbelievably good salmon, best I've ever had. You want to book well in advance for this, we waited too long, but lucked out due to a cancellation.
The third time we came out for the Wednesday chicken bucket. Super good as well. Chicken was moist and the sides were very good.
All in all Jo Jo is a cool dude, We talked with him and his wife good amount, my daughter wanted a picture with him, he was happy to take time out of the kitchen, and really cool with that. His wife is very nice. These are two people I think would be fun to hang out with.

They sat us in a table in the corner that didn't have any light even though there were many tables available and when we food arrived we couldn't even see the food that we were eating. We ordered the Fond Bento from the appetizer menu and the slaw salad (forgot the name), and longanisa corndogs. When the food arrived the presentation was nice but once I took a bite of the corndogs it was soggy, didn't taste fresh as if it was frozen and microwaved. The slaw was unedible. It had a lack of dressing to mask the bitterness and the cabbage so dry that it was hard to chew. The cucumbers were so dry they were concaved. The Fonds Bento was supposed to be a 4 exquisite Pupus selected by the chef. Not one portion was good. It was all ingredients like old fish, stale yam chips, etc. It seemed like all of the dishes we ordered were prepared before and stored and brought when ordered, very similar to episodes of Gordon Ramsey's kitchen nightmares.
