I'm glad this place is here, it's a great addition to the area. I love spring rolls and these were pretty good. Large size and three of them is just enough to satisfy an appetite. I'm especially pleased I could make mine vegan, and they have two sauces out of seven that are vegan. There's enough ingredient choices to make a healthy roll, but being vegan I wish there were more veggie options like bean sprouts, avocado, mushrooms, cabbage, stuff like that. The place was beautiful and clean and the staff were friendly and helpful. Being my first time there, I wasn't completely savvy about how the ordering process worked, so when it came time to choose a topping, I thought the staff person would ask me which topping I'd want, like how they asked me for all the other options. They didn't ask, and the next thing I knew my rolls were wrapped up and handed to me, no topping. Ok, I guess I should have asked for the topping at the right time, only I didn't know when that was. I know now. You only get two very small containers of sauce for three large spring rolls, which was nowhere near enough. I had to take one and a half rolls home and use my own sauce. There are no spoons at the utensil area, so you have to use a knife to scoop out the sauce to get it on your roll, which is hard to do with a knife. The chimichurri sauce was thin enough I could pour it onto my roll, but some of the other sauces are too thick to do that. Also, the water cups at the water station are about the size of a thimble, my partner said. That was pretty funny. And there's quite a lot of plastic that comes with your order, and no recycling bin to place them into when you're finished with your meal. Read moreI was excited to try RollUp for the first time after making a special drive out to your restaurant. Unfortunately, the experience was very disappointing from start to finish.
My husband texted me his order—a Big Momma Roll, chicken, "the works," and peanut sauce. When I arrived, I was told there wasn’t enough chicken for a full roll. The staff added a partial portion of chicken and then filled the rest with beef. I was fine with the substitution, but it ended up being mostly chicken with a small amount of beef, and I was later surprised to see an upcharge for beef at checkout. This didn’t feel right since the substitution was only necessary due to lack of chicken, and my husband never actually ordered beef.
To make matters worse, as soon as his roll was finished, fresh chicken was brought out from the back—something I would have gladly waited two minutes for if I had been told it was coming.
When it came time to order my own roll, I noticed two different kinds of noodles had been used between mine and my husband’s. When I asked, staff said, “they’re almost the same thing,” which didn’t feel like a great explanation for inconsistent ingredients. Finally, when I asked for peanut sauce (which was specifically part of my husband’s order), I was told they were out of it.
I understand restaurants sometimes run out of fresh items, but the communication throughout was poor, and the end result was not what we ordered. My husband ordered a Big Momma Roll with chicken, the works, and peanut sauce. What he received was a smaller-than-advertised roll with chicken and beef, no peanut sauce, and an unfair upcharge.

Read moreIt's like a chipotle or subway, where you go down the table picking your ingredients as they put together one of the 3 (or 4) vietnamese dishes: spring rolls (like a burrito with rice tortilla and vietnamese flavor inside, noodle bowl (everything in a spring roll but in a bowl without the rice wrap, salad (basically a noodle bowl with greens instead of noodles), or a vietnamese sandwich.
So pick the format! a spring roll, noodle bowl, or salad.
Then you pick your protein - I realized from looking at my menu picture now that the beef and shrimp will cost an extra $4 per bowl each. Each protein is cooked full of flavor.
Then remember that you choose 4 veggies, and then toppings - they are 2 different things. I kept asking for "the everything" as it says on the menu and the server kept trying to tell me I had to pick 4 veggies... lol. They have a huge plastic (or glass?) separator between you and the server so it's hard to hear them unless they speak up.
Sauces: The Nouc Cham is like a vinaigrette that usually goes with the vermicelli salad dishes at normal vietnamese places, and the peanut sauce is what you usually get with spring rolls. Avo Queen is a bit different, but creamy and delicious and Guava Vin was too sweet for my taste, but an awesome salad dressing for those who like it a bit more sweet.
The black tea with guava flavor and tapioca pearls were quite delicious. I usually don't like the flavored teas - I really prefer the milk tea with pearls instead.
