Ichiban Asian Fusion — Restaurant in Mineral Wells

My husband and I drove about an hour to get to Ichiban and we were not disappointed. The Restaurant was attractive and clean. The staff was very friendly and helpful. We are vegan and it can be hard sometimes finding things to eat. When we explained our needs they were super helpful and made sure to inform us what was in each dish we asked about and they were happy to remove things like eggs from dishes we wanted. We ordered the Pad Thai which came with miso soup and a very small salad (delicious with lots of fresh veggies that were cooked just right and still firm) Vegetable spring rolls (delicious and crispy) Veggie Sushi roll (tasty and exactly what you'd expect) and the fried tofu (this was our least favorite, the tofu is quite large, breaded, and somewhat flavorless and squishy inside. Giving this place 2 stars was difficult. I have a hard time being "mean" when I think about folks getting up every day and doing their jobs. But this place was pretty awful. We spent a few days in Mineral Wells to visit some of the surrounding parks. But this was small town Texas where dining options are overwhelmingly limited to fast food, BBQ, and "Tex-Mex". We were ecstatic to see an Asian-Fusion restaurant in town and incredibly disappointed when we visited it for lunch one day. The blinds were pulled tight over every window making the dining room feel like a cave. The service wasn't horrible, it was almost non-existant. And the food was dreadful. We when arrived, there was only 4 other people in the restaurant. It took at least 10 minutes to receive menus. Another 10 to place our order. We got our sushi after our salad and soup. There was a tiny sliver of avocado in my avocado roll. The rest was rice. We then proceeded to wait another 20 minutes for our hibachi meals, which were ice cold. At no time did our waitress check with us to see if our food was ok. I sat with an empty water glass for 10 minutes . We finally get the check only to discover they autocharged us a tip.
