Earl Giles Distillery is one of the most visually stunning and thoughtfully designed bars in Minneapolis. With its high ceilings, lush greenery, and light-filled industrial space, it feels like a cocktail greenhouse. Whether you’re out for a date, meeting friends, or just in the mood to sip something beautiful, this place delivers on atmosphere.
The cocktails are the main event, and they’re excellent. Rooted in Earl Giles’ background as a producer of artisan syrups and mixers, the drinks are layered, creative, and often visually dazzling. Many come adorned with edible glitter, adding just the right amount of playful sparkle to an already polished experience. Beyond the alcohol, they also offer a growing selection of THC-infused cocktails, which are carefully crafted and full of personality.
A special shoutout to their expanding non-alcoholic options, which are a hit with my sober friends. It's clear they're putting real care into creating inclusive, zero-proof drinks that don’t feel like an afterthought.
The food is the weak link. While the menu has been growing, it’s still hit-or-miss, and best treated as light snacking rather than a full dinner experience. That said, the effort is there, and with time, the kitchen may well catch up to the bar.
Service is friendly and professional, and the whole experience feels polished without being pretentious. Earl Giles is a welcome addition to the Minneapolis cocktail scene. This place sparkles, quite literally, and invites everyone to enjoy something special.

Read moreWe stopped in on a Saturday afternoon around 2:30PM for a quick bite after setting a wedding near by. LOVED the atmosphere and found it relaxing and inviting. We were promptly sat by the host and our waiter dropped water off pretty quickly however, after that it took her over 10mins to come back to us for our order and the service was slow the rest of our time dinning. We ordered a the sausage pizza $15 + mushrooms, a side of ranch, the EG burger $17 and 2 lavender vanilla sodas. The pizza was ok, but there were no mushrooms on it and we were billed for them. The burger was a bit on the greasy side, came with nothing on the side and a bit average for $17. We had to ask about soda choices as we could not fine them on the menu. We were charged $5 per glass of soda and the most shocking/appalling charge was the $3 for a tiny ramekin of ranch to dip my pizza in. Due to the awkward pricing on the menu we missed the pricing for the dippers until the bill came. The menu does indicates that the dippers are 4oz for $3, however it is a 4oz ramakin filled about 1/3 of the way full. Side note: There is also a charge for Employee health care tacked on to the bill which I think was understandable given the cost of health care, however $2.95 per check seems extremely high if you think about the number of checks per day they do x 7 days a week x 4 weeks in a month. Read moreVisiting a friend here in the Twin Cities, he suggested we dine at Earl Giles on a Sunday evening because of the relaxed and unique atmosphere. I ordered the blackberry lavender sling and it came out so fast I was in disbelief. Excellent flavor and the potency to put a smile on my face! Any questions we had were answered in a knowledgeable and enthusiastic way which was truly engaging and helpful. Maddi was a wonderful and very attentive server with an incredibly engaging personality. My friend and I ordered the national treasure pizza as we like a more traditional pizza flavor with tomato sauce. It also was delivered remarkably fast! It was topped generously and had an impressive flavor. Could not have wanted a better crust in taste and texture. So impressive that I ordered another one to take home. As for Dippins we tried the roasted garlic aioli and the Mexican hot honey. Both were spot on tasty! Chose the budino butterscotch pudding for desert and while it looked small to the eyes, it was more than enough dessert coming from a guy who tends to want the biggest serving I can get. It was incredible! Perfect finish to one outstanding meal. From stepping in the door and seeing the place to settling up the check and buying a couple of bottles of their distilled product, every moment was a pleasant experience.
