t seemed like forever, but the new location for Rise & Shine Bakery finally opened in February 2022! inspite of the never-ending road construction on Hwy 99 in front of Rise & Shine, i am happy to see it is busy-busy during the all important lunch rush,
the menu has been expanded and includes rotating daily specials. i recomment every single one. many of them are new to me and i have enjoyed each one i tried
bahn mi chao: sardine or mackerel in a tomato based sauce with accompanying baguette.
meatball with fried egg
pork belly with vermicelli
vietnamese hot pot! was available on weekends. i'm not sure of it's current status.
pho bac, pho ga, and of course, bu bo hue are constant favorites.
the bahn mi is freshly made and the baguettes are crisped up beautifully. my favorite remains the "special" cold cut bahn mi.
service by the staff is always pleasant and respectufl. and it goes without saying that Mai is a treasure.
best to go earlier or later if you are interested in dine-in as the lunch rush is truly very, very busy

this is a teeny tiny place at the end of an eclectic strip mall, most notably neighbors with Star Poke. parking is behind and below the building.
this is such a small place but loaded with goodness. there is room in between the counter and the wall to do a slow turn and not bump into the person waiting behind you. the pastry case shows both sweet and savory. there is a small table against the wall, but don't even think of sitting there to eat, because it is loaded with "to go" orders of the weekly weekend specials.
let's talk about the weekly weekend specials: changes weekly. this week it was Spicy Noodle Soup (turned out it is Bun Bo Hue). when i saw the "dining table" piled high with the weekly special for pickup, i had to order one to go, too, because that's how i am.
i cannot express how impressed i was with the quality and care of the "to go" packing. the broth was in a separate container. the bun noodles, the veggies, the meats were beautifully arranged in the styrofoam container. the bun bo hue had pork knuckles with the cartilage as well as the slices of the vietnamese pork/ham. the broth was delicious although i missed the pork blood.
the special combination banh mi was not terrible, but disappointed. this is the cold cut pork bahn mi with the pork/ham slices and pate with an added surprise of chopped pork belly. first, the price was more than i expected at $5.99. the baguette was more dense than i am used to. the aioli was tasty, the smear of pate was parsimonious, as well as the thin, single slices of the pork cold cuts. the generous serving of the pickled veggies were marinated well. don't get me wrong, the flavor of the special banh mi was good, but i wish there was more of it to taste.
the young lady at the counter is cheerful, helpful and pleasant. since i aimlessy drive up and down hwy 99 on weekends, i will happily stop by to check out the weekly specials and the next time, try out the savory goodies in the pastry case.

FOOD: Banh mi – special combo (Vietnamese meat loaf slices) $8.50: 5 Star - OMG THE BREAD WAS AMAZING!! I think they make their bread in-house as all their pastry/buns are. The bread has the nice crusty exterior with pillow soft and light interior. It’s the perfect bread LOL Great ratio to bread, meat, pickle daikon/carrots, and herbs. Banh mi – grilled pork and fried egg $7.50: 5 stars – The bread is that good that I have to say it again – AMAZING! Like the combo banh mi, the ratio of filling to bread was perfect. The pork had great flavor and the egg was a good compliment. Special of the day: Steamed bun crunchy pork belly $9.00: 4 Stars – Great little 4 bao buns – so uniform that it makes me think it was store bought. Either way good ratio of bread, sauce/spread, pickled veggies, and pork. My only ding would be if they provide you with a bigger piece of crispy pork belly. They provide you with two thin slices. Daily special: Bun Bo Hue (Spicy beef and pork noodle soup) $14.00: 3 Star – I was so happy they had Bun Bo Hue! The flavor was great, and they gave me the spice level I wanted! However, Bun Bo Hue usually consists of multiple slices of beef shanks, oxtail, pork hock, sausage, and pork blood. I got a slice of meatloaf slice, one pork hock, and one beef shank… Despite the flavor, I probably wont order this again. The banh mi is definitely the way to go.
RESTAURANT / MENU: This restaurant has been on my list to visit for a while but heard there is usually a line and sells out of items early. We finally took a risk and go for lunch the other day and it was pretty dead. The restaurant is a free-standing building immediately off the 99. You cant miss it though since its this bright yellow little building. Inside it’s a nice, clean, small restaurant.
The menu is pretty straight forward. You can find all their banh mi options on the tv screen behind the cashier, two chalk board with their daily specials, and a bunch of large studio-quality photos that list their rice and noodle options.

Read moreI am a long time customer since their original pick-up location in Shoreline, and don’t get to visit as often as I’d like since we moved to Seattle, but now that they have a bigger place we have gotten to dine in a few times now and it’s really great, a really nice and welcoming experience!
We always leave with pastries for later, and at least 1 special sweet. The sweets rotate so it’s always a pleasant surprise and as usual the food is amazing.
So fresh and delicious, everything just tastes perfect. Starting from the fresh sandwich bread. Myself being vegetarian I’m always happiest with my banh mi from here over anywhere else. It’s a place that makes you feel like they understand that even though you don’t eat meat, you still enjoy eating good food! My partner always has the best things to say about his meaty choices as well.
When eating in you also get a pretty presentation when your very affordable sandwich is served! Very low price for the incredible quality. Amazing!! Where else/how often do you feel like love and care went into the food you’re eating??
They were also very understanding when we were ordering for our picky toddler and served us a little plate of noodles with hoisin sauce and tomato slices for her :)
Last but not least I have to give points for the clean and spacious women’s restroom, and convenience points for the spacious parking lot.
