Now those who read my reviews regularly, know I usually have photos, but this is a carry out review, henceforth the absence of photos.
Probably most of you are not aware there is a full service restaurant inside of Gregg Young Chevrolet. The Corvette Cafe has been there for quite awhile, but I had not known of its existence until Chef Ryan took over the helm in 2015. If you didn’t know, Ryan was the head chef for Hectors’s Baja Cuisine for 12 years.
Ryan redesigned the menu and the cafe furnishings and made it a Triple D kinda place. You order at the counter and sit down to wait for your name to be called. If he knows you, he may even bring your order out to you or one of his excellent staff, Keisha or Andre may make the delivery. It’s self service soda and coffee.
The fare has a heavy accent on Southwest and Mexican Cuisine, but there are excellent American standards as well. All food is scratch made and the portions are large. Whether you come for breakfast, lunch or dinner, you will get a very tasty meal at a very reasonable price.
Now about that carry out. I had called ahead for the daily special (BBQ Pork Belly and Beans) and when I arrived, Andre had it waiting for me. I also grabbed some of Ryan’s house made green and red salsa which is absolutely the best. It is made fresh so only lasts a few days, but no problem, it’s usually gone in two with me.
So back to the special, the Pork Belly was quite an enjoyable surprise. Super tender and juicy. The seasoning rub was nothing like what I have experienced in the past and was addicting. Now I usually bathe my meats in bbq sauce, but this did not need anything but a trip to my mouth. Ryan bbq’s all types of meats and I would highly recommend you check them out.
Now I have dined here many many times over the past few years and you do not need to have a vehicle in for service or buy a vehicle (though I’m sure they’d appreciate if you did) to dine at the Corvette Cafe. It serves the local area 6 days a week and is open early for and closes late.

There's no signs! It's INSIDE the dealership I insisted. Not that I'd been here myself before but I felt (semi) assured we were in the right place 😬. 🤞🤞🤞 With a side-eye in my direction he found a place to park.
I knew what I wanted before walking in. My husband had never seen the menu before but literally chose the first thing on it, the Breakfast Tacos. When asked what kind of meat he'd like he jokingly said All of Them! He, knowing nothing of this place, had no idea his wish would be granted 😆. Without a second of hesitancy they told him DONE! I've read over and over again how incredibly accommodating they are to customers. He was delighted!
I ordered a Mushroom and Cheese Omelet with Hashbrowns and Wheat toast. Eggs were sooo fluffy, great ratio of filling. Yummy toast. Hashbrowns were pretty much perfect! I loathe anemic potatoes and these were so crispy. Everything was buttery and seasoned. It was breakfast staples done Exceptionally well!
He Loved the tacos. Every component Amazing. He got spicy salsa to pour over and said it was some of the best he's had. He just kept staring at me and the food in disbelief. He finished every bite. I was so close but had to call it.
Chefs Dan and Pat took care of us. These guys care. They enjoy what they do and Boy does it show.

Read moreNo, I’m not shopping for a Corvette. I’m a BMW 3 Series guy currently masquerading as a Ford Bronco driver. But when I saw that Corvette Café - yes, it’s literally inside a Chevrolet dealership - had a higher Google rating than any other breakfast spot in the area, I had to investigate.
Now, if you’re picturing a side area of the showroom with a few tables, a walk-up counter, and some complimentary auto-dealer coffee…you’re absolutely right. But that’s where your correct assumptions end.
What looks like a snack bar is actually a legit scratch kitchen. The printed menu? Just a suggestion. If they have the ingredients, they’ll make whatever you’re craving. We overheard someone calling ahead to ask if they make eggs Benedict or huevos rancheros. The answer? “Not usually… but we can.” And by the time those folks showed up, it was happening.
I created my own masterpiece: a grilled breakfast burrito smothered in both salsa verde and chipotle enchilada sauce. It was glorious.
Remember when you’d say, “Mom, can you make me [fill in the blank]?” and minutes later a plate of love showed up in front of you? It’s like that. Except the “moms” are a couple of guys in the back, grinning ear to ear as they play culinary jazz. You know those bands that are having even more fun than the crowd? Yeah - those are your chefs.
If they had a show on the Food Network, I’d watch every episode.
