Really love herb and rye, but unfortunately this experience was a let down. Trying to produce the same quality of service, food, etc for a drastically larger space is clearly the main issue. The mussels starter and scampi pasta were the only dishes that we enjoyed. Scallops we did not eat as they were extremely fishy. Risotto, au gratin, and tuna tartare were unfortunately bland. Scallop plating was off putting. I’ve worked in the industry, so if I order I’ll pay for it and with the other aspects of the experience not being so great we just wanted to get out of there. AC was blasting on our table as well.
Service was frustrating. We felt forgotten. We tried to create conversation with the server but she was clearly just checking off boxes. There was no investment from the server or busser. We ordered $200 in food for 2 people and felt like an afterthought. My water was empty for majority of my meal until we were able to ask the busser to refill. Consistently had to ask for iced tea refills as well.
All fixable issues, but training is clearly lacking. If staff are wandering the floor they should be looking at the diners tables not waiting to be asked and wandering aimlessly with a tray. Busser seemed to be putting on a show that he was busy, but in observing the other tables in that section, other diners waters were empty, etc. If a busser doesn’t have anything to do they should have water pitcher in hand and scanning their section. These are very small notes to elevate the experiences.
When clearing another table, a large piece of steak about 4 inches long was dropped on the floor. It remained there for our entire meal. Even after the busser severely slipped on it, looked at what it was, then continued to walk away. Staff continued to just walk by it and nobody picked it up. It was there when we were leaving as well. As a former restaurant and hotel gm this was extremely careless to see. Safety hazard for everyone. Serving staff was definitely going through the motions and lacked care. We did not take food to go and asked for our check after again not being checked on. Took another 5-8 mins to get the check. We then were getting ready to go as the busser began to clear and crumb our table.. if we were getting dessert this would have been appreciated, but it was simply showing lack of training as it made it extremely uncomfortable for us as we had to remain seated during his whole process since he was moving chairs, etc around and hovering over us. We had already paid and this should have been done after we left. If he would have started conversation about our meal, etc it would have made it less uncomfortable. I feel like these servers are striving for only 18-20% tip. I have no problem tipping 35-40% for quality service- might be something for them to keep in mind.
There was also a large group of about 20 men behind us that made the atmosphere worse on top of the other issues. They were extremely loud and yelling. With no padded furniture in a great room like that it made it feel like a cafeteria. There’s nothing to absorb the sound. Lighting was really bright for a dinner experience compared to the other rooms.
Glad we went to check it out, but will be sticking to herb and rye in the future.
We went to herb and rye the following night and service, atmosphere, and food were spot on! Spent almost $100 less and received the same amount of food even with tipping 35%. They split dishes without us asking, coursed it out perfectly and never let a drink get empty.
Also - when customers submit internal reviews it is nice for management to reach out to check in on the experience. Not all reviews are looking for compensation, etc. I truly wanted to provide feedback for you all to improve. Hope this is seen and...
Read more[Above all, will I be back?] OMG, this is a TRUE hidden gem in Las Vegas for my Korean community! My favorite steak house in Vegas so far! As a Vegas local, I will definitely be back to try different plates as well. I had much a better experience here than Herbs & Rye. Overall it was an amazing experience and I highly recommend this place and you will never regret it!
Food:
I can tell the chef is dead serious about the foods! Rich and delicious!
Mussels with garlic tomato sauce The sauce was heaven. It is like Mariana sauce with full of garlic flavor. I needed more bread to finish the sauce!
Rib Eye Steak (Steak doesn't come with side, order separately) Ordered medium rare and it was served as indeed medium rare with truffle butter on top. It was perfectly trimmed and cooked the way wanted. Melting in the mouth. The quality was not spared for the happy hour price! Hands down!
Squid ink cream pasta: Bacon, Masago, Parmesan, Egg Yolk The sauce was soooooo yummy and rich! Perfect combination with a lot of parmesan cheese. The pasta was perfectly cooked.
Broccolini & Cheddar It really hit the spot! Ingredients are nothing special, but how can you make this so delicious?
Wine The sommelier recommended this . It was not too pricey and was so soft when swallowing. Love the smell and taste as well. This is my new favorite wine from now on :)
Oyster Shooters: Blood Orange Bloody Mary & Vodka It was okay but not my favorite
A complimentary b-day cake! It was so nice of them to offer a chocolate lava cake which melts in the middle of the cake! You made my day!
Ambience It is much bigger place thank looking from outside. It is a huge place with a speak-easy vibe, composed of different sections. Like other upscale steak houses, it is very dark with dim lights which feels intimate. Vintage items here and there. There are portraits of famous people (my seat had Martha Stewart) in an royal gown. You can wear casual outfits but I recommend to dress up. Good for special occasions like b-day, anniversary, etc. Looks much more gorgeous than the website pictures lol
Service: Our server was so attentive, quick and friendly. It was my first time so he explained thoroughly and above and beyond. Kept checking if everything is okay in the perfect timing. I would give him 20 stars out of 10! Spectacular!
Hygiene: Utensils, plates, cups, glasses, table and the floor were clean.
Price: Came here during the happy hour. It costed about $250 for the foods and a bottle of wine we ordered above.
Restroom: It was clean and well maintained. Gender separated.
Location: It is in the middle of office area, at a shopping mall, 1.5miles from the Strip. The restaurant is tucked back in the shopping center, on the first floor. The door seems easy to be missed.
Parking: Limited and busy. Had to hunt for a spot about 5 minutes.
ETC Happy Hour: 5-8pm everyday! 50% off for selected menu items and drinks. Gift cards available at the reservation desk. Last Seating: 11pm, Last call for kitchen: 11:30p, las call for bar: 11:45p Recommend to get a reservation for a large group. They are closed on most major holidays (x-mas, new years day, memorial, independence, labor, etc) Coat check you can hold luggage
Nestled just off the bustling Strip in Las Vegas, Cleaver – Butchered Meats & Seafood is the kind of timeless steakhouse that manages to be both classic and cutting-edge. From the moment you walk through its doors, you're met with an ambiance that whispers old-school glamour while pulsing with a cool, contemporary energy.
Atmosphere & Interior
The interior of Cleaver is rich with character. Think moody lighting, dark leather banquettes, mirrored walls, and a sleek, vintage-inspired bar that would feel right at home in a 1950s film noir. The golden glow from art deco fixtures casts a soft sheen over polished wood tables, creating an atmosphere that feels intimate yet vibrant — perfect for both date nights and celebratory dinners.
There's a palpable sense of sophistication without pretension here. The soundtrack is smooth, the crowd eclectic, and the vibe effortlessly upscale. Cleaver doesn’t try too hard — it doesn’t need to. It knows exactly what it is: a steakhouse for those who take their meals seriously but still want to have fun.
Service
Now let’s talk about the heart of Cleaver — the staff, who elevate the experience from memorable to unforgettable. Two standouts on the team are Jack and Ella, who embody what hospitality in Las Vegas should be.
Jack, with his easy charm and deep knowledge of the menu, guides you through the dining experience like a seasoned pro. His wine recommendations are spot-on, his timing impeccable, and his presence reassuring without ever being overbearing. He makes you feel like a regular, even on your first visit.
Ella brings warmth and precision to the table. Her attention to detail is unmatched, from remembering your preferred steak temperature to anticipating the need for an extra napkin or side plate before you even have to ask. She strikes that perfect balance of professional and personable — a true gem in the Vegas dining scene.
Together, Jack and Ella form a dynamic duo that makes every guest feel valued, understood, and welcome.
The Food
As for the food — Cleaver doesn’t miss. The steaks are dry-aged, beautifully charred, and cooked with surgical precision. The filet is fork-tender, the ribeye rich and robust, and their signature sides (the truffle mac, creamed corn brûlée, and duck fat potatoes) are indulgent without being overwhelming.
Seafood options shine just as bright. The pan-seared scallops are buttery and delicate, and the lobster bisque is a creamy, luxurious starter worth every spoonful. For those seeking something bold, the bone marrow appetizer is a must — unctuous, decadent, and perfectly seasoned.
Final Thoughts
Cleaver isn’t just another Vegas steakhouse — it’s a destination in its own right. The combination of stellar cuisine, stylish atmosphere, and an outstanding team (especially the unforgettable Jack and Ella) makes it one of the most compelling dining experiences in the city.
Whether you’re a local looking for your new favorite spot or a visitor searching for that quintessential Las Vegas meal, Cleaver delivers — with elegance, flavor, and...
