I can only speak for the canelès and macarons, which I received as a gift. I wish I lived nearby to try all their treats.I am from Bordeaux, and the canelès have exactly the same shape and flavor as those made in the canelè birthplace, Bordeaux. I used to make my own, using the traditional copper moulds, and when enjoying the Gaby and Jules ones, my first thought was: They have the same recipe I inherited from my mom! As for the macarons, I am very particular about these ( especially in the US where you never know what to expect from what pastry chefs call “macaron”), and most of the flavors that were in the box were divine. I particularly recommend the almond, the lavender, and the earl grey. I would make these my daily dessert if I could. The Nutella was very fun too, because it was so recognizable!.Among the 6 or 7 flavors the box contained, the only one I did not care for was the strawberry, which had an artificial flavor,candy-like. Now about the exceptional quality of the packaging for shipping, and proof that the owners put love and dedication in their work: This was a mother’s day gift, and I am French. Included in one of the packages was a handwritten card, in French, looking so authentically written by my son, including the signature. My husband had to remind me that it could not have been written by my son.This goes to show the attention to detail, the effort the staff put into it.The caneles and the macarons came into two different FedEx boxes, since the caneles and the macarons required different storing temperatures. The canelès were secured in layers of material so they would arrive intact. Same for the macarons, except that they were wrapped in thermal bags that could have withstood any heat wave, and several cold packs. Gaby et Jules have changed their recipes and become disappointingly lazy with their recipes while simultaneously raising their prices. The royale has a couple less layers now, their seasonal pieces are now overpriced for being only one layer per piece, with no inner insert. I used to be an avid supporter of Gaby, and all I can say is I'm deeply upset at how much they've changed. I used to go every day!
And for those calling their Macarons the best in the city? Do yourself a favor and check out La Gourmandine, unless you enjoy the flavor of sugar over that of the actual fruit, etc.. Gourmandine's desserts are half the price and they haven't become lazy in their design nor recipe, they have far more options, including in baked goods. Truly, do yourself a favor and compare the royales, macarons, chocolate eclairs, and quiche lorraine and you'll question why you've been coming to Gaby (at twice the price).
The sad part is I would still go to Gaby despite the prices being twice as much, because they offered different, and sometimes more intricate desserts. Not anymore. Not to mention, the bases Gaby provides with the majority of their desserts are thick, overly sweet, and poorly thought out. You can'teven eat them alongside the dessert: you eat the top, then the base.... by necessity. I'm simply overly disappointed to see how they've changed.

When I went in, I was so confused because everything looked amazing, but the lady at the front was really nice and explained everything in detail, which helped me decide. I finally went for the raspberry tart which is one of my favourite deserts ever because it’s not too sweet, and also the raspberries give it the freshness and darkness to cut through the rich and decadent custard. This was absolutely perfect and at par with some of the pastries I had in Paris and Nice. I also tried the coffee macaron, and it was absolutely divine.
