Last night, I had the pleasure of visiting the newest wine bar and eatery in Redlands, Uncorked on State, and I must say, it left a lasting impression. From the moment you step inside, you can't help but be taken aback by the well-crafted finishes and the warm, inviting atmosphere. The attention to detail in the interior design is evident, and it's clear that the owners have put a lot of thought into creating a space where patrons can relax and enjoy a memorable experience. Now, let's talk about the wines. The selection at this wine bar is nothing short of exceptional. During my visit, I had the opportunity to try two truly remarkable wines, each with its own unique character. First up, the 2018 Marcarini La Morra-Barolo from Piedmont, Italy. This elegant Barolo offered a bouquet of red cherries, rose petals, and subtle hints of spices. On the palate, it was beautifully balanced, with the perfect harmony of tannins, acidity, and fruit. The finish was long and satisfying, leaving me craving another sip. Next, we sampled the 2018 Izadi Rioja Reserva from Rioja, Spain. This rich and full-bodied wine boasted notes of black fruits, vanilla, and a hint of cocoa. The complexity of flavors and velvety tannins made this Rioja a real treat. It was the perfect companion for the charcuterie board we ordered, which featured an assortment of artisan cheeses and cured meats. Speaking of the menu, it was evident that the same attention to detail that went into curating the wine list was also applied to the creation of the dishes. I felt that they captured the taste of Napa and Russian River and brought it to Redlands. We decided to start with the Cast Iron Raclette Fondue. I chose the Wine Maker Burger and my girlfriend had the Ragú Bolognese. The raclette was a delightful combination of flavors, with marinated artichoke hearts, baby potatoes, roasted red pepper, and caramelized garlic, all artfully complementing the gooey, melted cheese perfectly. The burger was cooked to perfection, boasting a beautifully charred exterior and succulent, juicy interior. The caramelized onions added a sweet, savory touch that elevated the burger to new heights. The side of French fries was equally impressive, and I venture to say they were the best I've had in a long time. The Ragú Bolognese was rich and flavorful, with a savory sauce that clung to every strand of pasta, making each bite an indulgent delight. Uncorked On State is a must-visit destination for wine enthusiasts and food lovers alike. Read moreMy wife and I dined here on a Thursday night. Walked-in about 5:50 without a reservation and were seated immediately (4 or 5 other tables were full). Our waitress Rebecca was new (she said about three weeks), super nice, professional and fun. The owner chatted with us a couple times. The tables filled throughout the evening, so I’ll get a reservation next time.
Food was amazing! We ordered the charcuterie and cheese plate which had 4 or 5 cheese selections, several meats, nuts, fruits (fresh and dried) pickles, crostini, mustard and jam. Quite extensive and a good value. The grilled fig salad was delicious. Grilling the figs gave them a perfect texture and concentrated their flavor. With the crunch from the nuts, spice from the arugula and softness of the goat cheese it melded perfectly. We then ordered the brussel sprout flatbread. A touch of salt and spice baked into the bread had me craving every bite.
The wine list is very extensive. Offerings by the glass looked good, but we ordered a bottle from the very long wine library list. Our Merryvale 2016 was about 1.5x markup from its former retail price. A great mix of California and European wines all fairly priced but you could spend a lot!

It's simply eye-opening how inviting, charming, and delicious this newly minted Redlands corner restaurant and wine bar will draw you inside. Located downtown on State Street, which is quaint and charming enough to mimic Main Street USA, the lovely proprietors, Suzanne and Jake Doll, serve up delicious food and wine, welcoming hospitality and plush seating in rich, deep blue velvet wing back chairs with a fabric so soft, you'll never want to leave. Look up and see matching royal blue pendant lighting. Then gaze up at the lovely, sparkling, mismatched, and chic vintage crystal chandeliers. Comfy sofas with coffee tables and wine bar seating make you feel at home. The stars of Uncorked are a menu and wine list that are swoonworthy. There are selections to please everyone's palate.
