The legendary California taco is ground beef, American cheese wrapped in a corn tortilla, that is grilled and dusted and Parmesan cheese. Then topped with shredded lettuce and diced tomatoes. It's a cheesy, greasy taste of heaven. Jimboy's only uses fresh ingredients in everything is made from scratch. They take pride in their unique tacos and home style cooking. This isn't a great date spot, but it is a great place to get your taco fix. They do have an off the menu item, it's called The Gypsy taco. It's extra meat, extra cheese with no lettuce. Ordered some new taquito burrito tonight. Got charged 10.75 for it plus 1.75 to put the taquitos in it. What? That didn't even make sense, but that is what she told me the extra 1.65 was for. I quickly got a refund for the burrito as I wasnt paying 13.36 with tax for a fast food burrito. Next time they should tell people that a burrito costs that much. Then asking for a refund, she said she didn't know how to give me money back on my credit card so she gave me cash back. And 4.75 for a tortilla and cheese? Never again!

Jimbo's has a very distinct flavor you can't find anywhere else. It's a great meal to have once a month or so. It's a little expensive for what you get but honestly I eat everything they put on the plate. The only way to get in if a right turn. All the left turns are blocked. This place has plenty of parking but was a little hard to get to traffic wise. There was obvious construction going on but the whole place was still cleaner than most restaurants. I was served quickly and the good was amazing as always.

This was the first time I had ate at a Jimboy's Tacos, since the mid '70s or so, when they opened a shop in Rancho Cordova California. How many years has that been?

I was curious to see if the tacos were made the same and...they were! Lol.

If you've eaten at a Jimboy's, it ain't Taco Bell. And, I'm not slamming Taco Bell. I used to eat there many times.

Major kudos to whoever trains these folks to make those tacos like back in the day!

Oh, yeah. The reason for this review, the food! Staff and food were outstanding!

Jimboy's tacos is kinda like the ocean. When you live near one you might not visit it all the time but when there isn't one for a couple hundred miles you start questioning why you're living in Fresno in the first place, or any other place that doesn't have a Jimboy's. I recently moved back up to NorCal and I got so excited when we passed by a Jimboy's, I've eaten there three times in the last two weeks, I missed you baby! Oh, also a recommendation, keep it simple. Order their original ground beef tacos with that cotija cheese dusting on the shell, they're so delicious! I macked down...
