My husband’s birthday dinner on the island. Ambiance is great, love the decor. I first called to say we’re celebrating my husband’s birthday, and they were very nonchalant. We get to the restaurant and waiter was nice but seems to be in a hurry. I felt he didn’t check on us as well as he did others. I mentioned it’s my husband’s birthday and he didn’t say anything, the table next to us is celebrating a birthday and he wished her a happy birthday. The appetizers were ok, we had the sizzling tiradito, the bonito flakes were definitely not dancing. We also had the roll and that was good. My food was good, I had the Mexican fish stew. The worst part was that my husband’s dinner was horrible. He left hungry! He ordered the wahu and it was overcooked and tough. We told our waiter and after a while he brought another fish and this time it was basically raw. The waiter did make up for it by taking off his meal and our drinks but for a $150 meal, the food was very basic. We basically shared my food for dinner. Overall disappointing and would not recommend. I’m a little Leary trying out their sister restaurant, the prime, tomorrow night for our 35th anniversary dinner. It came highly recommended so we will try.

We stayed at the Morningstar Buoy House and we ate at Isla Blue. Lovely atmosphere. The service was outstanding. Our server, V was attentive, thoroughly answered all of our questions about the menu and got our food to us quite quickly. It was service with a beautiful smile. The food was excellent. Beautifully presented and delicious. We had the langostino tacquitos as an appetizer. Then for the main course, I had the butterflied tiger prawns. Absolutely delicious, grilled to perfection and the prawns were enormous. My husband had the Carribean lobster. The lobster was perfectly cooked and tender. The dipping sauce for the lobster was also good, a lemon butter sauce. We had the jalapeño creamed corn with caviar on the side. It was so different but good, the corn was crisp and the sauce was creamy. If we are ever back in St Thomas again, we will be stopping by Isla Blue. It was an awesome dining experience.

The atmosphere was pleasant but after ordering the Chicken and a tropical salad with no onion, we waited for AN HOUR for just those two dishes to be brought out to us … and the salad still had onion so I had to send it back. When it finally came out again, I noticed it was NOTHING like in the menu. The menu described papaya, dragonfruit, toasted coconut, celery, lime dressing etc … I just got arugula with a few diced cucumbers and a piece of watermelon. When I asked the waitress, she said that substitutions happen when the kitchen is unable to get certain ingredients. I understand that might be the case on an island , however when almost every single ingredient is missing, it’s worth checking with the guest to make sure they actually like all the substitutions or whatever is left of the « salad» .

This place is terrible. We sat out on the beach and I ordered at the bar. I ordered two double rum on the rocks and a Carne Pizza.

The guy I ordered with said it was his second day on the job so I give him a break, but there was a woman named Alexa who was extremely rude.

When the guy I ordered with gave me the check, I noticed I was charged $8 for the ice. EIGHT DOLLARS for ICE in a DRINK that I was already paying $30 for. So that’s $38 for ONE double shot of rum (not a mixed drink). The pizza was $34 for a 10”.

So I asked the guy about this, and he asked Alexa if he should remove the charge. She responds “no that’s just how our system rings it up and she has to deal with it”. And proceeded to roll her eyes.

At that point, I was extremely disappointed but figured I’d enjoy myself on the beach and will feel better after I ate as I was super hungry.

I paid for a paddle board and two beach chairs. The guy handling the water excursions charged me $25 per chair (total of $50) on my card then an additional $20 for the paddle board but in cash.

I didn’t want to go out until after I ate as my sugar was low so I waited for the food to come. It took an hour for the pizza to come and it was stone cold and burnt.

I took it back to the bar and the guy asked if i wanted it to be reheated. I responded “for $34 pizza I think it would be best for a fresh one as it was already burnt and wasn’t salvageable.”

25 minutes goes by, and at that point I was exhausted beyond starving and just ready to go, so I went back to the bar to tell them to cancel it. Instead the guy who I’d initially ordered with saw me and went to the kitchen to bring my pizza. He comes out with a hot pizza but the WRONG pizza. I told him it was fine and I’d just take it because I was hungry. I had to go back to the bar to get my own cutlery and napkins from the servers station because we clearly weren’t being served by the beach servers.

Pizza was not good. I ate the cheese off of just 2 slices and left it.

Long story short, avoid this place at all costs....

Building loyalty to a business is difficult, especially when you are new and promise high standards and expectations. Isla Blue opened last year and we were one of the fortunate clients to experience their remodeled location and new menu. We had a negative experience with our dinner and promptly communicated it to management. The management at the time discarded our concerns and we were left with no choice but to share the experience with TripAdvisor. We were contacted a couple of weeks after our review was posted by Caraline from main management and she invited us back to give them another chance. The restaurant manager had been changed, along with the chef. Fast forward six months and today we had our “test” meal at Isla Blue. It is clear that the ambiance is the same, but the players are all new. They brought in an all-star staff. Crystal our server was caring, attentive, humorous and kind. A perfect partner to match the exquisite presentation and taste that Chef Christian created. My wife had the Grouper Special and I had the Mahi Mahi. The taste and texture of each meal was spot on with the best restaurants in the world that we have experienced. Don’t skip on the dessert. The Mexican Chocolate cake and ice cream is a creation that leaves you delightfully full and wanting to rub your belly. Isla Blue has stepped up their game and warrants you to make a special dinner even more exceptional, or challenge your palate to discover new flavors that will make you want to come back again to see what Chef Christian can create with local...

A Culinary Gem at Isla Blue – Chef Christian Shines

Isla Blue at the Buoy House in St. Thomas has always been a solid dining choice, but Chef Christian has elevated it to something truly special. On my recent visit, I asked him to bring out what he thought I should eat—and what followed was nothing short of extraordinary.

The dishes were masterfully crafted, vibrant, and bursting with flavor, as if each bite had a story to tell. From perfectly cooked meats and fresh seafood to elegant presentations, Chef Christian’s expertise is undeniable. The meal alone would warrant a 5-star review, but his warm company and obvious passion for his craft truly set the evening apart. He mentioned he’s been at Isla Blue for just a few months, and his presence is already a very welcome addition.

Having visited Isla Blue in the past, I can confidently say this is now one of the brightest spots in the Marriott Autograph Collection lineup. Chef Christian is a rare find—his food, personality, and vision have transformed this restaurant into an unforgettable experience. I will absolutely return and can’t wait to see what he creates next.
