Amazing ramen. Fantast8c ervice. We came here twice and tried all three ramen; tsukemen (dipping ramen), abura soba, and the tonkotsu. You have to get the tsukemen and abura soba. Nothing like this in NYC. These were super delicious.
The tsukemen has this fragrant "umami" flavor with a hint of yuzu and spiciness. It was definitely fish based but you don't taste the fishiness. It's got this deep boiled for hours texture. The broth was thick but not at all oily. The two types of charsui were phenomenal! Super melt in your mouth. The ajitama (sauna egg) was gooey and eggs and creamy. The thick noodle were savory with the dipping sauce. And finally you can even enjoy the left over suace as broth as they add lighter broth to your dipping sauce.
The abura soba or dry mix soba was another winner. It's thinner sauce that you mix with the soba and it was just as savory as the tsukemen. A bit more on the soy sauce side in terms of flavor but definitely you can the fragrant fish sauce base as well.
The matcha mouse definitely hit the spot. Soft pudding like. Intense matcha flavor but not over powering. Pairs really well with the dollop of ice cream. Really great way to finish the meal.

The Chicken Karaage had a crispy batter. The inside was tender and juicy. It was good. I can taste the side of mayo having some sort of curing that you would find in a salted egg yolk.
The Cha Shu Bowl was soft and tender. It was flavorful. The Cha shu did not have ligaments of tendons, I think this dish is better than Marufuku ramens dish. It was okay.
The Spicy Miso Ramens broth was a little on the thick side. The broth was very aromatic, maybe a little too much for my taste. The noodles were thin, but cooked well. The egg was overcooked — the inside was not runny, but not well done either. The cha shu was thick but soft.
The tonkatsu broth was very good. It was more on the thick side, but the flavor was very on point . It was not too overpowering nor too much aromatics. I should have went with the tonkatsu broth.
