Fu Sushi has officially opened, and after experiencing its first few days, one thing is clear: this all-you-can-eat sushi spot is my new go-to for sushi. For 90 minutes, you’re treated to an endless flow of fresh, beautifully crafted sushi and a variety of mouthwatering appetizers—and it’s worth every second.

The sushi is outstanding. You’ll find familiar favorites and a couple of standout specialty rolls that are incredible. The Sunkissed Roll is bright and the perfect mix of tuna and salmon, the Salmon Lover Roll lives up to its name with rich, buttery layers of salmon, and the Volcano Roll brings the heat with bold, spicy flavor and a satisfying crunch. Every roll is made to order, so nothing feels rushed or pre-made.

Then come the appetizers—perfectly portioned and full of flavor. The edamame is fresh and well-seasoned, the shrimp tempura is light, crispy, and served hot, the seaweed salad is refreshing with just the right tang, and the crab rangoon is golden, creamy, and totally addictive. They’re the perfect warm-up for the sushi, and honestly, worth a visit on their own.

The vibe at Fu Sushi is warm and welcoming, with staff that’s friendly, attentive, and clearly passionate about making your experience great.

Cute interior, good service, and pretty decent food.

At this AYCE place, you choose if you want the “standard” option (order anything from Side A of their menu only) for $25 or the “premium” option (order from both sides) for $35. We went with the premium option, because it offered more roll choices, meat skewers, and sashimi.

Apps are also included in the AYCE and they were tasty. Miso soup was flavorful, and the fried items (crab rangoons and gyoza) were fried nicely. The fish quality and roll variety of the sushi are about what you’d expect from an all you can eat place. It’s not the best in town (or the best I’ve had at an AYCE place), but top tier quality isn’t what you go to AYCE for, anyway. It’s tasty enough to be worth it, especially if you go hungry or if you like sashimi.

Honestly, I was shocked that sashimi was even included, because it’s usually too high ticket of an item for an AYCE place. They do limit sashimi to 5 pieces per person, which I thought was reasonable.

Ice cream is also offered as part of the AYCE.

Servers were very on top of refilling waters and getting our orders in quickly.

The sushi at this restaurant is delicious! Probably the best I've had in Santa Fe! I've been here twice so far and everything has been great except for how the menu is described by the waiters. They are an all you can eat sushi restaurant and if you eat sushi you know you can easily spend $100. Their premium menu option is 35 per person and it gets you the option to eat from everything on their menu, HOWEVER you do have to finish all of your food or you will be charged additionally for the plate. You can share food if everyone is paying for the same all you can eat meal option. They have a cheaper option that allows you one side of the menu. They suggest you order small quantities at a time. They do also have an a la carte menu that isn't advertised, but both times I have chosen from this menu and next time I will definitely be doing the all you can eat option because it is ultimately cheaper if you want the special...

It’s all you can eat but if you want sashimi and other special rolls and seared offerings the second option which is 10 dollars more, is the better selection. The fish tasted fresh and was beautifully presented. They are very generous with the wasabi and ginger. Admittedly it wasn’t crowded so I can’t speak to how quickly the food is served when it’s packed but my orders were brought to me within minutes. The owner even took the time to introduce himself and ask about the meal. The atmosphere is pretty standard —no opulence. To me, as long as the place is clean and tidy, which it was, the decor is pretty low on my list of priorities. I would definitely recommend Fu Sushi. I am already planning my return trip.
