Bill Miller BBQ — Restaurant in Schertz

Not sure why this place is so popular. Have been there 3 times now hoping we were just there on a bad day last time. It has never gotten better. This last time was the end, won't go back unless it's for breakfast - their only redeeming time. And the only reason they get 2 stars.

Breakfast is the best. Scrambled eggs are cooked well, sausage is juicy and tender, order the breakfast plate and you will get SO much food at a very cheap price. Breakfast tacos are doable depending on what you get. I stick with bean and cheese and have never had a complaint there.

Lunch and dinner however is where the issue remains. Brisket is dry and does not taste like it was smoked properly. Ribs were so touch I could hardly cut the meat off the bone with the little plastic knife they give you. Sausage links were crispy on the outside, not snappy like a good smoked link, but crispy like they have been sitting under a heat lamp all day after being cooked to death last night. Potato salad has no flavor and honestly tastes like the kind you buy in a bucket at Wal-mart. Cole slaw was literally just shredded cabbage and herbs, no moisture of any kind. I was expecting mayo or at the very list a vinegar based sauce, there was nothing. Spanish rice was mediocre at best, edible but not something I'd go back for. They also poured BBQ sauce over the sausage and brisket, it was drowning in sauce. Other BBQ places typically server sauces on the side, but this was just horrible. This has been our local Bill Millers for 15+ years. The food is great! It’s generally consistent and with as busy as this location gets your food is fresh and hot 9/10 times. Bill Millers is a staple for us but it’s one of those places that’s very medium. It’s not outstanding, it’s not bad, you’re gonna get a good hot solid meal everytime and that’s good enough for us!

The issues we run into consistently are management related. Now like I said, there aren’t issues with the food consistently but there are consistent issues with how management handles the few and far between disappointments. Management NEVER offers to make it right by way of correcting your order or offering a refund. That’s such a simple fix but it’s unheard of here. If your order is incorrect? sorry! Food came out over or underdone? Sorry! Overcharged? Sorry! That’s all! This is the biggest area they could improve. This location HAS so many loyal customers. If you make a mistake, correct it! It matters.

Lastly, closing. They close at 9pm. I know I know, don’t be that guy who goes in right before closing But if you are going to dump all the food and drinks at 9pm… adjust your closing time to earlier and don’t let customers in at 8:45 for a meal. They could have a dining room full of customers at closing yet they’ll dump all the tea down the drain at 9:01 without offering anyone refills first. So...

I was craving Bill Miller's , I come here for bbq because my family for years has shown loyalty to Bill Miller's. Sure there are other Bbq places,that are good .

Today was probably one of the worst experiences I've had at ANY Bill Miller's I've been to . Joshua the" plate maker " My friend got a turkey poor boy and fries . The fries were not good . She asked for fresh . I ordered a pulled pork sandwich . (Altho it's just the ribs they didn't use ). With fries and asked ,as well for them to be fresh. My sandwich sat on the rail of the hot hold. My friend got hers. Ok, so I waited to see if he was going to acknowledge me standing and waiting there. He did not , so I sat down . For 12 mins. We waited for fresh fries, all the while my sandwich is getting cold. Finally the fries come out , luke warm at best . Like they just got them from the drive thru bin. We waited 12 mins for that .
