This brewery was amazing. My wife and I had extensive conversations about the possibility of life elsewhere and the Drake Equation. The Drake Equation, formulated by astrophysicist Frank Drake in 1961 and popularized by Carl Sagan, is a mathematical formula used to estimate the number of detectable extraterrestrial civilizations in our Milky Way galaxy. The equation multiplies several factors, including the rate of star formation, the fraction of stars with planetary systems, the number of habitable planets per star, the fraction of those planets where life develops, the fraction where intelligent life evolves, the fraction capable of interstellar communication, and the length of time such civilizations can communicate. Essentially, it's a tool for contemplating the likelihood of intelligent, communicative life beyond Earth by considering various astronomical and biological factors. While the values for many of these factors remain uncertain, the Drake Equation serves as a starting point for discussions about the potential existence of extraterrestrial civilizations. And the beer was delicious.

I have left plenty of reviews but this is my first one star review. I am leaving this not to blast the place, but in hopes it can be helpful. The big picture: It took over an hour and 20 minutes from seated to receiving food for a table of three and, despite being very hungry, we left much of the food uneaten because it was so bad. $78 for two burgers and 12 wings. Now, the details: I have been here a few times during the week and it was busier on this visit than I have seen previously. We were seated about 12:45 - some tables finishing some ordering. The wait staff was very friendly and I think they were trying to do a good job (no standing around, etc). However, the wait staff just weren't being efficient with their time. Staff were walking right by tables that went unbussed for 30 to 60 minutes each time they went to the back empty handed; bringing silverware/napkin rolls two at a time to a large table; etc. Those inefficiencies resulted in our order being taken more than a half hour after being seated. Our food coming out 50 minutes after ordering. About that food.... When it finally arrived, the fries were cold and soggy, the burgers luke warm, the tots sooooo salty they couldn't be eaten. The one bright point in all this appeared to be my son's wings - he said they were good and they looked good (not all soggy, he said they were warm and good flavor). Sometimes the wait it worth it when the food arrives... it was not worth the wait nor the prices ($78 before tip for two burgers and 12 wings). The atmosphere is nice and the wait staff were friendly but everyone working here has to do better. Seriously. I will give it a while before I think about coming back and certainly won't try a work meeting or something else consequential as a first run. Good luck to the staff - you have a ways to go.

Update: first time we really wanted to like this place. Order took over an hour. Second time we went was on my birthday. They forgot to put in my daughter's order. So by the time she got her meal the rest of us were done. We decided to try again... this time they forgot my order. Black and blue burger. They rushed to get it out and charred the heck out of the burger. We won't be giving this place a fourth try. 3 strikes and your out. First impression was fantastic. They are pet friendly and they brought out fries for the kids for free. They have some really great draft beer that is made on-site. Our server was friendly and the food was very good. I wish I was giving this place 5 stars. Only reason they are getting 4 is because it took over an hour for our 4 meals to come out. Probably short staffed like everywhere else these days. We will definitely go back. I had the Trendsetter IPA which was hazy and flavorful.

Ultra friendly Bar Staff engage you in conversation, explaining the Brewery and different brews. I tried their Lagger and it was ice cold and smooth. Loved it. Their grill menu is Fantastic and creative. I had a Bar-b-que pulled pork sandwich with cold slaw on top between two thick slices of Texas Toast with Fries. It was more than I could Eat but finished it off for just one Reason… tasted so good. Huge-long, modern, wooden bar with comfortable high back wooden chairs. Go outside, they have plenty of nice tables and lighting for a Sidewalk-Cafe Style arrangement to Drink & Eat with Friends. Crafted in Western yet modern elagance the Smith-Alley Brewery is a Class Act. I loved it and will be back before fall weather sets in with the Chill and bring friends and sit out side in the Alley in the Evening. I highly recommend this business.
