Update! Went back for more and was impressed. Their machaca was fantastic as was their tacos. You can mix and match the tacos from a variety of meats. Can't wait to go back again. This place is consistent with quality and service. Original review down below from a few months ago. Another winner, great food, great service and decent prices for the quality of the food and their portions as well!!!
We were hungry and had seen this place before but this time we tried it.
Two orders for us. One was carne asada quesadillas with a separate order of rice and beans and the other was chilaquiles.
The quesadillas were awesome. Appetizing would be a better word. Not just big but flavorful. The carne asada was well seasoned, savory, cooked just right with great cheese and the tortilla was the ideal vessel to carry this thing in. Maybe a little bit more time on the cooktop or salamander or however they toast the tortilla in would have been a plus. Regardless, I would have it again any day. In other posts I don't always give positive praise to the rice and beans when it is not deserved...but their rice and beans were what I have come to expect. Rice was not dry at all with a great balance of flavor. The beans were a treat, the right creaminess, richness and very flavorful.
The chilaquiles were another delicious treat in many ways. Visually when it arrived it looked amazing! The presentation was more than I expected. Usually chilaquiles look like a wet mess with no rhyme or reason...it's chilaquiles after all. But the presentation of the plate when it arrived was the surprising thing. Everything was well placed and in such a way that this plate would have been right at home in a much more expensive restaurant. It was almost like the many food items that accompanied this dish (egg, guac, beans, etc) were placed and organized purposefully so as to visually impress. As soon as we dug in is when that visual plate artistry was gone. We almost felt bad disturbing it with our forks! I should have took a picture when it first showed up at our table. I'm curious to see if the next time I go there I will see that same thing. Flavor wise I could find no fault anywhere. There was authenticity to the flavors. The fried egg was perfectly cooked, the chips held up well to the sauce as they stayed with the right amount of crunch. The sauce was savory, zesty, not overly spicy. Nothing was excessively salted. Everything, including the rich and creamy beans and guac were just right. From the visual to the taste this plate was complimenting itself.
This place was banging it was that busy when we showed up. I was a bit concerned due to them being that busy that the food quality, service might suffer a bit. That was never the case. Everything was on point.
Next time we are in Sierra Vista we'll go back and spoil ourselves to great food, great service at a great price and I'll be sure to photograph and describe our next culinary adventure at Taco Giro. Can't wait to try all.

My brother and his wife came from out of town and I was telling them how great this restaurant is. I’ve had some issues with service before, but they were minor problems that I overlooked-not today. Everything took time, okay it’s the end of the lunch rush hour-that’s a minor problem- I can deal with it. Unfortunately, everything started to move slowly and there weren’t that many patrons left at this time. Frankly I thought they forgot about us. The orders were taken and my brother received the wrong meal but he didn’t want to create “waves” since we were hungry. He barely touched it and I even offered to switch and gave him part of my meal so he would eat something. The food was very good, but our waitress was AWOL for most of it-pretty much until the end when the bill came. It was lucky that we didn’t ask for drink refills and what we had on the table was sufficient, whether we liked it or not. When it was time to pay, as he doesn’t know the rule of the day which evidently the waitress comes to collect your cash at the table so he was, in his words, rudely told to return to his table ( even though the workers were nearly bumping into each other and eating at the register) and to wait-and wait we did, my brother doesn’t make up such stuff. I had enough and said let’s just go to the cashier and take his money. I’m proud that my brother pulled the tip money since no one deserved it but him. We did ask someone for boxes since he hardly ate and a bag to carry it, which we never got. In my car I keep Target bags, and as a side note, they know how to treat their customers. I really don’t understand why if you’re paying in cash the server has to do the transaction and not the cashier-maybe there’s a problem there? If you’re paying with a credit card you can go to the cashier and not have to return to your table. By now you’ve figured out that my brother is not the “confrontational type” when something isn’t right but I am. I was calling the manager by phone when a woman answered to ask why? My brother told me to let it go and knowing him, his answer is to never go back there again. My brother does come up with good ideas. We’ll try someplace else...

I'd go back, I'd just pay with cash. I like their nacho fries, carne asada anything, most of the wet burritos and the fish tacos. Would recommend any of those items. I haven't had any of their cocktails but my wife enjoyed hers. I've had some bad experiences with service before and more flies than is comfortable so generally do to-go orders and don't have an issue with food.
BE AWARE - AT LEAST ONE OF THE WAITRESSES HAS BO QUALMS ABOUT STEALING YOUR MONEY.
Only pay with cash if you go here. my wife was charged twice for her bill. That in itself was no big deal, mistakes happen and sometimes card processing is weird. We thought it was a mistake and one of the pending charges would drop off.
Well, not only did one of the charges not drop, but she was charged different tip amounts. being in the service industry we understand how inputting tips work. So her waitress intentionally processed two different tips, one rightful and one she just made up.
When calling the restaurant to fix this, no one who could help was available apparently so they gave her the equivalent of "we'll pass your message along". We aren't hopeful that the restaurant will resolve this. (Edit: The restaurant didn't resolve this, we ended up having to go through our bank, but did receive the funds and fees back. I do have a Google review reply but my bank resolved this so I have not further contacted.)
what we thought might've been an innocent mistake originally ended up being straight up theft by the waitress.
We keep very little in our actual checking accounts, usually only what we plan on spending, so this theft led to her account being over drawn and a few other issues. She contacted her bank and they told her they could see that the card was swiped within seconds of each other.
If you do use a card payment, keep your receipt and monitor your account.
