Fantastic experience. Walked in and we were immediately seated despite the parking lot being full and them appearing to be quite packed.
Ricky the bartender was our waiter, and he gave us some fantastic drinks that included the Ginger Bramble, Coffee Nudge, Piñaritta, and the Maker's Mark Manhattan. We started off with the Calamari and Lemon Thyme aioli, which was nearly "lick the bowl clean" good.
My wife got the dinner special which was Scallops with Bacon Jam served on asparagus and a sweet corn risotto. It was delicious. The bacon jam complimented the natural soft sweetness of the scallops and the asparagus and risotto were very well seasoned.
I got the 8 oz Sirloin served with chimichurri, asparagus, and roasted potatoes with red bell peppers. I asked for my steak medium rare and they delivered. A great sear on the outside and light pink through the middle. The chimichurri was really well made with lots of garlic and pickled red onion to compliment it and the flavors. My asparagus were a near perfect al dente and well seasoned along with the roasted potatoes and red bell peppers.
To wrap things up my wife got the Salted Chocolate Torte, which was very rich and a fantastic blend of flavors that was cut and complimented by the whipped cream on top.

I had heard great things about Ambrosia Bistro in Spokane Valley so like any good Foodie I had to experience it myself. Ambrosia has a subtle elegance to it, it’s a great spot for solo dining, couples, date night, Business dinners and group outings. The menu is very condensed as the chef and the team at Ambrosia focus on producing great food and a great experience. I had a locally-sourced beet salad with mixed greens dressed in an orange vinaigrette with roasted beets, toasted almonds, and goat cheese and then an amazing Pork Tenderloin dish grilled with pear and thyme jus, accompanied by stone ground mustard and balsamic glazed roasted potatoes and seasonal vegetable that was tender and cooked with care and pride. I matched that as the menu recommends with a glass of Callia Malbec. My server took very good care of me and timed the courses perfectly. This is one of the better restaurants in Spokane and the SpokaneValley area. The food is reasonably priced and they a great wine list to pair with their amazing dishes. The calamari was adequate, the breeding not particularly interesting and the dip was rather like thousand island dressing. My husband had a pasta dish he said was good. I had the Beet salad. Frankly, very disappointed! romaine lettuce ripped up, seemed like a whole can of canned mandarin oranges, a smattering of pecans, some goat cheese and the beets were just ok. The vinaigrette was nondescript. When I asked for tofu they said they had run out! Of tofu?? Really?? Disappointing. Our initial waitress was not particularly friendly and lacked any effervescence fand halfway through the meal we lost her unexplained to a much friendlier person- have no idea what happened. The atmosphere is just ok but again fairly nondescript - bare concrete flooring and black vinyl booth Is certainly nothing that added any ambiance.
