Costa Vida is my favorite Mexican restaurant in Spring Hill! The food is absolutely delicious, and the menu is simple and easy to understand. Every once in a while, they switch it up to offer limited-time specials.
We are on a first-name basis with Guillermo, the main manager. He might be the owner, too, but I'm not really sure. He is really kind to his staff, and it shows. The team is super friendly, and they are more than generous with food portions. Everyone seems happy to work there, which is always a good sign!
This restaurant is very similar to how the food is served at a Chipotle, Moe's, or Qdoba. I actually prefer this restaurant over the Moe's in Spring Hill because it is cleaner, has a welcoming environment, seating is open and airy, and it never seems crowded. Plus, the staff is amazing, which I already mentioned! The pricing of the food itself is the same as the aforementioned restaurants, so you won't have any sticker shock there.
One confusion point is that there are many more menu items than the TV menus display when you enter the restaurant. Also, those screens are up really high, so if you are standing near them, you have to strain your neck a bit to read them. If you order from the app, you will have a different (perhaps more extended) menu than in the store.
There is outdoor seating, which is fantastic. I wish there were room for more of that at this location. Another fun fact is that there is a drive-thru! It is hard to know that because this restaurant is at the end of a very busy eating/shopping strip. I think they've done a better job more recently than in the past to make folks aware of that.
The parking gets a bit hairy at busy times, especially if the drive-thru line wraps all the way around the building. It's rare, but it happens. One time I waiting a solid 10-15 minutes to back out of my parking spot because the drive-thru line was long and not really moving.
My favorite menu item is the $5 chicken tortilla soup. It's very filling, so great value for the money! My only complaint with that is that folks don't order it enough for the staff to know how to consistently make it. The ingredients are hit-or-miss sometimes. Otherwise, I have to remind the staff how to make it! So that feels a bit weird.
Overall we always enjoy visiting this place and know we will walk away with a great experience and tons of food for the price. If you haven't visited this restaurant yet, you are missing out. When you visit, say "hello"...

And the food is amazing (guacamole and the tomatillo dressing could be better but everything else was on point). The negatives: they closed 20 minutes early the first night I came (I had driven a few extra hours so that I could eat here, I love Costa Vida and haven't had it in a year), and the manager wouldn't let me order food even though I was in well before they should have closed and was fine buying cold sweet pork-I was desperate and he was very unhelpful. I drove back the next day and was able to get food but they made you go through the drive-thru because they closed the dining room. Went home & proceeded to dig in, not even noticing until after finishing our dinners' and were ready to tear into our little individual pies that we were short by 2. By then momma dukes & G-ma were relaxed and settled in but I had my heart set. So I drove back up there only to see they closed half an hour ago.
