Service: I loved the lady at the order window. The guys behind her were working with smiles on their faces. The food came out in respectable time. The fail was 2-fold. Either the BBQ sauce lid was not on fully before being placed in a paper bag with the utensils, bread slices, and other condiments, or it got popped of when the plastic bag that contained the whole order was cinched and tied tightly. This bag was not jostled, struck, smashed, etc. In the 4 minutes it rode in the passenger seat. When I pulled the paper bag out, all of its contents hit the floor and the plastix back was filled with the rest of the BBQ sauce from one of the containers. Issue 2 was the BBQ sauce was ice cold.
Food: 3 stars because the ribs were pretty good. They were close to fall-off tender if that's your thing. The brisket grill cheese had all the making to be good. It was a good size with great choice of bread, but the bread was ruined by what felt like a quarter stick of margarine for each slice. The oil just spilled out of it when bit. I just used a fork to eat the interior. The mix of ingredients inside was different. Not really my thing, but I could some people really liking it. I also had the peach cobbler. The coloration and propotions of crust-to-peaches-to sauce made it look promising. The actual flavor was decent. However, the texture was nasty. It wa gel-like and the crust was spongy. You cou mildly press it with a fork and watch tge juice come out then return when the pressure was removed. Crust shouldn't do that. I made it about three bites and I had to toss it. The BBQ sauce flavor was good...with a hint of a beer-like flavor. Too bad it was ice cold. I hate ice cold condiment for my hot food.

Ok, I'll expand for anyone that needs it. 1st- Customer Service: A1 She walked us through all of their offerings since it was our first visit. The "wait staff"/food runner was also the Owners' daughter and she was also very pleasant and PROUD of the food they make. 2nd- Food: IN.CRED.IBLLLLLEEEEE We ordered a chopped brisket sandwich, brisket baked potato, smoked burger, ribs, boudin eggrolls, cajun potato salad, mac and cheese, banana pudding and peach cobbler. Add 2 bottled drinks (free water and Lone Star (for adults)) and we had spent JUST over $100 which for lunch is pretty steep but was actually pretty decent for a bbq joint. They also had platter "packages" to feed parties of various sizes so you could easily (and deliciously) feed a family of 4 for $75-$100. All meats were OUTSTANDING. The brisket was moist and the smoke flavor was prominent and PERFECT. My son KILLED the half-rack of ribs and could have gone for more. For sides the potato salad and macaroni and cheese were hits. The mac and cheese was a smoky creamy concoction that was amazing dumped on the baked potato. The desserts were good, peach cobbler nice and thick with a rich filling and a chewy crust. The banana pudding and boudin eggrolls were my least favorite items of everything we had. The boudin was a consistency I was not prepared for, I didnt detect any rice and ot was more of a "mash" and the banana pudding needed to be thicker. The vanilla wafers were still hard/crunchy, so much so that I broke my first plastic spoon trying to dig a piece out. First off - this place has the best pulled pork I've ever had, in my entire life, hands-down. I cannot say enough about how good the pulled pork was. The Big Red Bacon Burnt Ends we also very good. My only issue with both were that they just needed a sprinkle of salt. Just a tad to bring out the beautiful meaty flavor of each over the rich fattiness that comes along with well-prepared BBQ. Once I added a tiny amount, it was perfect. I know salt is sometimes a preference for some, but you have to have a little to help pull flavors forward and I felt like there was none. The burnt ends almost had chocolaty flavor to them, I guess from the combo of the sweet Big Red and the bitter burnt flavor.
The mac and cheese was very good and the red beans & rice was also good, albeit quite spicy. It is nice to have such good side as they sometimes get ignored in BBQ joints, but you can tell they take just as much pride in them.
The only 2 disappointments I had were the brisket was just okay and the meats were warm, not hot, as if they had been plated and sat in an unheated window for a bit. As for the brisket, it was well-cooked and tender, just didn't have a ton of flavor from the meat or the smoke. I'll be back - for sure - and hopefully be able to add...
