Pibil doesn’t show up on many OkieMex restaurant menus. I was excited to try it at Don Pibil. So, what’s the deal with Pibil? It is prepared differently than carnitas and has much more flavor.
Don Pibil Stilly Express, located in the building that used to be Maysan Gyro. The inside of the restaurant is typical OkieMex décor and ambiance. Low rent restaurant operations set up in a repurposed building (often an old Pizza Hut) or any previous failed restaurant location. Like most all small Oklahoma Mexican restaurants the air conditioner was fighting hard; just barely staying a few degrees above the oppressive July heat. But well enough that it was not uncomfortable in the restaurant. Likely much cooler than dining outdoors at Don Pibil Grill, a food truck operation on 6th Ave.
My wife and I both had the Don Pibil Special. A platter described on one of the online posted menus as a chili relleno (covered in queso), beans, cilantro rice, pico de gallo, cilantro, pibil pork, red onion and tortillas. This was not listed on the menu screen, but the guy at the counter said he could make us a couple. No hay tortillas ni salsa gratis. Ok then. With the meal we ordered the Trio Appetizer Sampler. Queso, salsa, guacamole and chips. Recommended, see the pictures. What we were served was a little different than the description. Specifically, no queso on the relleno, regular Mexican rice, no red onion, jalapenos instead and no tortillas. Minor issues, the crispy coated relleno was excellent. Queso not needed. Overall, the meal was good. The Pibil was excellent. Salsas very good. Guacamole excellent!
Order at the counter. Your food is delivered to the table. We enjoyed the food!

Only problem I had was being way too rushed through the food line when I was just trying to see everything they had and I was the only one ordering. No one behind me. Anytime I tried to look at the menu and ask a question about something I kept getting rushed to tell the dude what else was going on my burritos. I'm trying to enjoy the experience and not miss anything good out of the plethora of delicious foods that are on the line. Relax and let people ask questions and make sure they're getting exactly what they want. No need to rush when there's no one even waiting in line. When I'm choosing what I want to eat it should be at my own pace.
