This was, by far, the best Indian food I have had in Pittsburgh. I will very definitely be back. The last time I had really great Indian food was in Sacremento, ages ago. Every place I have been to in Pittsburgh has a buffet, and the staff acts weird if you try to order ala carte. So this was a very nice contrast to the usual Pittsburgh Indian restaurant.
The flavors were amazing, and fresh. The chef is really paying attention to how he is spicing the food, and you can taste the flavors shifting from bay leaf, to cardamom, etc. It's quite clear that they are grinding their own spices in house, not using some jar of curry powder from Cisco. I would have loved a little more heat on my vindaloo, but I certainly was not complaining.
I would give it five stars, but the service needs work. To be fair, we went on a Friday evening, around 7:30. That's a busy time, but there were three people on the floor for a place that might seat 40-45 people. It took a long time for someone to take our order, and she did not write it down. We had to remind her about an appetizer, and there was a long gap between the first course and entree. My water glass sat empty for a long time, while (what I believe was the FOH manager) socialized with the table beside us.
I was a server for a long time. At some pretty fancy places, too. When you say, 'I'll be right back with water', do that. The water pitcher is how you check on tables. Walk around. Top off the glass. People will tell you when something is not right. That's your moment. Most importantly though, write down the order. Imagine if you spaced on a dietary restriction instead of just forgetting an appetizer. Being nice is not enough. You have to be organized, and keep an eye on every table in your section. I say this, because it did not seem like servers had defined sections.
I say this not to be mean, but as constructive criticism, because I want to see this place thrive, and grow. It's in a challenging location, near an overpass, in a not quite walkable part of Swissvale. It's not an ideal location, and that matters for a restaurant to survive. The food is amazing, and worth every penny. I'd love to see the menu expand a little in time, but there is not a thing wrong with it now. If you are spending your hard earned money on corporate Indian at Choolah, I invite you to put on your coat, and Uber over to the East End to get some realness in your life.
While we were waiting for someone to take our order, we considered leaving because it was taking a long time. It is an interesting neighborhood of suburban Pittsburgh with difficult parking is street. Simple no fills outside facade of restaurant. Don't let the simpleness fool you as this powerhouse restaurant is packed with indian flavor and innovation. Our meal: Appetizers: Paneer Kurkure: 6/5 - you will look at paneer pakora in a totally new way. Freshly made inhouse paneer in seasoned besan batter with corn meal crust.
B2B Chicken - 4/5 - great curry flavored crust. Chicken pieces need more consistency in size.
Main meal: Palak Paneer: 4.5/5 - home-made palak with chucky tomatoes, onions, garlic, and ginger. Great paneer.
Kadhai Lamb - 5/5 - Lamb is fresh and soft, and the gravy is seasoned to prefection.
Lamb Biryani - 4.5/5 - Rice is cooked to be prefection and seasoned well. Lamb was tendered. Just wanted more pieces.
Malabar Laccha Paratha - amazing tasted flakey roti with great taste.
Dessert: Qubani Ka Meetha - one of the top five desserts of my life I have tasted that improves with every bite. Apricots, ice cream, and nuts combo are amazing.
Great experience and conversation with Chef Gaurav about his food techniques and his willings to take constructive feedback was great to see. Thank you for making fresh Indian chai for mom late at night. She loved it.

My husband and I lived in India for several months and always love going out to eat Indian food. We are lucky in Pittsburgh there are so many great Indian places. But I have to say Bombay to Burgh has something special both in the experience and the food (oh my god, the paneer kukure!!!!) which was phenomenal and the best Indian I’ve had here in pgh. As we opened the door we were immediately entranced by the incredible smell. So fragrant and warm and so much depth, and that is exactly how the food tastes. The layers of flavor of spices in the sauces, we had methi mushroom paneer and malai kofta- incredible, impeccable! The staff are so friendly, we were immediately greeted and seated and had a very kind, attentive waitress. Everything about the experience of eating there was a delight- the food was incredible beyond belief and the atmosphere is perfect- Indian music playing, it feels cozy but not too dark and you feel like you’re in your own little world. The authentic silver cups remind me of exactly what we used when living in India and just added to the amazing experience- I truly felt transported and like we were in another realm. The serving bowls are all so nice too as well as the cups drinks like the mango lassi came in and it just felt like an incredible experience at every turn.
