Hot Teriyaki — Restaurant in Tacoma

I forgot how many times I've visited.

I visit mainly because of the sushi chef.

You really can taste the care, the balance, and the perfect rice to fish ratio here.

The rice is absolutely perfect and you can see each individual grain which to me is really important (unless you like all your rice mushed into one)

I don't really like sushi with all the extra sauces and whatnot so I prefer to just be basic and enjoy the rice, purity and oils of the fish, and presentation.

It's just perfect and I literally did a small happy dance with each bite I took.

Absolutely love him and the kindness of the server.

And the "fancier" Sushi places cant deliver this kind of quality.. id much prefer to come here instead of anywhere else.

Finally found my old sushi chef Choi at Hot Teriyaki, which just opened their new sushi bar. Choi has been my sushi chef for over thirty years and used to work at Kyoto Japanese restaurant until he went out on his own (about time)!

Food was exceptional and super fresh. Large cuts of fish perfectly selected and cut to perfection. We had tuna, yellowtail, salmon, mackerel and unagi (eel), with Tacoma, Red Dragon and Spicy Scallop rolls. We also had fried shrimp and gyoza as appetizers but ate them before taking pictures.

As I mentioned, everything was fresh and delicious, quick service and a great atmosphere. Make sure you come out to see Choi and support him so we can turn this into a full sit-down sushi bar. I highly...

Found Mr. Choi! Have know him for 20+ years. He prepares such an amazing food! I followed him from another restaurant he used to work in Kyoto Restaurant, and now this will be my place because his approach of cleanliness and quality food preparation is fresh and tastes the best of I ever had, always has good combination of spices teriyaki and sushi.
