I REALLY wanted to like this place, but it was severely disappointing. I knew the prices going in, but maybe I had too high of hopes too. The margharita pizza did not have fresh basil as advertised, they seriously threw dried herbs on after cooking...what authentic place does that?! Also, the tomatoes were cut uneven and mostly too thick. The dough was not cooked through, midway through it was still raw. I expect better of a $25 pizza. Then I got one pepperoni slice just to try their "American" side and wow...there was cheese on less than half the slice and the pepperoni was store bought and thrown on as an afterthought, not cooked (at all). See the pictures where I show how easily it's just plucked off. Again, I wanted to visit this place endlessly instead of driving 30+ minutes to Dough, but nope, NEVER again.

This is the real deal! Finally I can have here in Helotes an authentic Italian pizza, like the ones I grew up eating in my home country. Pizzas are freshly made to order and cooked just for few minutes in the traditional wood burning oven. I already went twice this week. You have to try it... this is nothing like the super greasy, arthery-clogging, "two to three business day to digest it" kind you get from the common chain companies. Fiamma pizzeria instead makes them with fresh ingredients and thin crust, just like real pizza is supposed to be. I love also the fact that this is a food truck so you can eat and socialize sitting outdoor. Well behaved dogs are welcomed. There is also a playground for the kids and outdoor games to play while you are there.

I apologize, but....mamma mia! Probably the best wood fired Neapolitan style pizza I've had this side of the Atlantic. Perfectly charred, thin (but not cracker-like) , crispy but still got that chew to it, smoky, crust, topped with a wide variety of fresh ingredients. Lovingly constructed by the owner in front of this huge pizza oven, which is not easy. What with this Texas summer heat and humidity? You gotta love what you're doing, and it shows. I'm just bummed, I've been missing out on the Nonna's lasagna, being sold out the handful of times I've been. Caspita! TornerĂł!

Caveat: Will be coming back, but will ask that both the pizza and sub get cooked longer.

Been watching Dave Portnoy’s “One Bite Reviews” and was inspired to check out a local small business pizzeria. The Cheese Pizza I ordered was very slightly undercooked by wood fire standards, but good nonetheless. I’d prefer it to have stayed in the stove another minute or two. The Italian Sub is absolutely massive and very tasty, but also not cooked nearly long enough. The Mozzarella cheese was actually cold and not melted in the slightest. I had to take the sub home and use a cooking torch to finish the job. However, it’s still quite good and, despite the hefty price, is large enough...
