We visited Pancho’s just four days after its grand opening at its new location on 10th Avenue in downtown Topeka. This family-owned restaurant, which first opened in Kansas City, KS in pursuit of the American dream, brings a warm and welcoming atmosphere to the heart of Topeka.
The décor is festive, vibrant, and impeccably clean. The staff — special shout-out to Jason A! — were incredibly friendly, attentive, and knowledgeable. My wife, already familiar with other Pancho’s locations, was excited to see how this one compared.
We ordered the shrimp chimichanga and the Texano chicken burrito. Both dishes were impressively large and full of flavor — definitely enough for leftovers the next day. The rice was perfectly cooked and well-seasoned, rounding out the meal beautifully.
