This is a review for Big Hoffa's Catering.

When we decided to have our wedding in Indiana, Big Hoffa's was our first pick for catered food - their barbecue is delicious, what else could you want for a wedding?

We placed a deposit over a year in advance - food for 225 and 22 racks of ribs. About three weeks prior to the event, we had to call to confirm that Big Hoffa's still had our day reserved and to confirm final details (drinks, cutlery) - it turned out, they had us catered for only 22 racks of ribs. Thankfully, we were able to get this resolved and re-add the full catering of 225 guests (crisis adverted). This was smooth and easy, and was overall a positive.

Unfortunately, the day of the wedding is where Big Hoffa's fell really short. What we were not told beforehand - is that their caterers will be present for two hours - they left out the most critical part, it takes them approximately an hour to set up the food before it's ready to be served. Meaning, you have a one hour window of food (this is what we experienced) - we didn't expect this to be an issue, we had tons of food so there'd be ample leftover to pick at for the remainder of the evening. This is a pretty critical detail as we also added food for vendors - who wants a hungry band? What really took us aback, is that we turned around and what was left of Big Hoffa's catering? Dirty aluminum trays and a receipt - they packed all of the food and left - we were told they bring extra, which makes sense. However, we had ~160 guests at our wedding - and - there were a few guests that were busy with wedding events, and, when they finally when to get catered food - there was nothing left. Where did our food go? Apparently, we should've had a person babysit our caterers!

This was totally unacceptable. We paid over $7,000 to have 225 catered food with 22 racks of ribs (at $23 a person, that's $5175 without ribs and full service).

Food was delicious, but, when your caterers leave without any notice and take all of the food?

I would not recommend Big Hoffa's...

As a Barbecue connoisseur, not only do I spend a great deal of time visiting BBQ restaurants, but I also make my own several times a week. To be clear, I hate posting poor reviews, but this is a place I’d certainly avoid.

1: The BBQ. 1/5 Purchased a Sampler Platter with Pork and Brisket. I normally shy away from brisket outside of the Lonestar State, but I gave it a shot. I do applaud the ability to order a tray as many places in the north do not offer. The ribs were dry, flavorless, and appeared to have been boiled. The pulled pork had no flavor and was also extremely dry. Moving onto the beef, generally my favorite, it was also flavorless but had a little bit of moisture compared to the latter. However, the brisket bark WAS flavorful. There unfortunately was no smoke ring to be found on anything. The sides of Mac and cheese and Baked Beans were mediocre. At least the Beans tasted like there was an attempt for flavor as everything else did not. The rolls were decent. The sauces were pretty good and applaud the effort here. However, great BBQ generally doesn’t require sauce, this was not the case. For reference, as many may question this review for authenticity, I dropped a photo of MY brisket for comparison, second to this review.

2: The service was very friendly and will rate 5/5.

3: Shakes were good but seemed pre-mixed. I’m not going to derail a BBQ review over a shake.

4: Atmosphere 4/5 was great and matched that of a typical BBQ restaurant. Outside of the Pirate theme, but every place needs to do something for fun. Very family-friendly oriented place!

Overall, I was impressed that a line maintained for hours. Polling my group of 4, not one individual was impressed. Coming from St Louis and BBQ’ing myself might set the bar higher for my review, but please- with all due respect, step up the game. Moisture, flavor, and effort seemed to be missed in...
